Kashi Halwa/Kushmanda Halwa/Ash Gourd Halwa
Ingredients:
Ash gourd - 1 Cut & Grate (800 gms/5 cups)
Sugar - 300 gms/2 cups Or as per your sweet preference.
Ghee around - 9 tsp (The more ghee we add, the colour gets richer)
Cashew(Halved) - 40 gms
Pinch of salt.
Cardamom powder - 1/4 tsp
Method:
1. Heat 1 tsp ghee in a vessel.
2. Roast cashew and keep aside.
3. Add 2 tsp ghee in the same vessel.
4. Add grated ash gourd.
5. After 5 minutes, add 1 cup sugar and mix well.
6. Add 1 teaspoon ghee.
7. Add one more cup of sugar and mix well.
8. Add 1 teaspoon ghee.
Note:Add ghee every 10 minutes.
You can +/- ghee as per your choice.
9. Add 2 tsp ghee.
10. Add a pinch of salt.
11. Add cardamom powder.Mix well.
12. Add 2 teaspoon ghee.
13. Keep stirring to avoid scorching.
14. Once the color changes, add roasted cashew.
Kashi Halwa ready to serve.
