I am waiting for a Stand that can make those kanji real.

So of course, Jotaro with his Stand's super speed and super precision, fast enough that it can move without being seen (D'arby couldn't actually see it move, grab a cocktail from the bar and bring it back to Jotaro) and it's amazing precision (capable of catching The Lovers between it's fingers), couldn't possibly have just snagged Tower from the air and squished it in it's fist...... Why did they need to stop Jotaro from dealing with this?

I believe Jotaro actually tried, but Tower of Gray is actually faster than it.

Jotaro can't use use Star Platinum's highest speed at will at this point. By the end of the series he probably could have. He didn't realise Star Platinum's real ability, so when he was actively controlling it like he was here, it wasn't able to use it, but was when acting on its own (When Jotaro tried to shoot himself, and when it randomly went and grabbed stuff.)

Search for "stardust crusaders vs tower of gray". You'll see that, in the scene prior to this one, Jotaro actually tried to deal with the enemy himself but turns out it was actually faster than Star and almost ripped Jotaro's tongue off. Also since Star Platinum's blows are really powerful, it could've damaged the airplane. Hierophant was in fact the most suitable stand to fight tower of gray in this situation. Besides, personal opinion here but I think leaving all of the fights, even the minor ones, to the protagonist would've been hella boring.
