    What you do is 70% beef and 30% lamb is the best way to do Koobideh salt and pepper as you like and add some somagh is that seasoning you put on top of your Koobideh when you be served Take all the onion juice out and mix the meat as much as becomes sticky if you like you add some baking soda but not much for each pound tip of tee spoon and mix I put the meat on skewer after I mix my meat and then I put all together in the refrigerator if you want to do your BBQ day after or same day Have fun is a best food 🥘

    @@gummybear41283 ill give it a try but am skeptical. The best koobideh ive had was in iran (this is a persian dish btw) and they generally use even higher percentage of lamb..like 70 lamb and 30 beef. Plus they use some more spices than what was used here...like safron extract for example

    Make sure to mix it well till it becomes sticky and when you place them on the fire, turn it after 10 sec so one side doesn't rip the other side good luck let us know how it turned out👍

    Thanks for the recipe! Just a question: are turmeric and sumac optional? I think sumac could be simply sprinkled over the koobideh right before you eat but some people would always add turmeric when they make the knead...

    Riaj Ali look up Iranian rice method and crispy rice. So good. But I use a $12 rice cooker off Amazon and it does a fantastic job.

    Some recommendations...1)you must mix the meat VERY well. 2) you cannot just lamb meat or it will apart. 3) stick to high fat beef for that portion 4) the grill should be of high temp, no slow cooking here 5) try a different company brand for beef, ince i started buying a different company beef and all of a sudden my kabobs were falling apart so i switched back t what i was using before, could never figure out what the problem was.

    Resting it mixed with onions over night will give it a bitter taste. Rest the onion separately then mix.
