Hi, those of us who are outside India, and are craving these delicacy without the luxury of an Indian grocery store, replace the dudhi with Courgette/zucchini! No-one can taste the difference! I can vouch it’s authentic taste, as I am one of those people in an Essex village who hasn’t access to an Indian grocery store! Gujarati’s are brilliant at finding alternatives!
