Yes, this is a bit tricky. Start with very large ripe tomatoes. I grow my own. My first egg also dumped out. And you must make sure the tomato sits squarely in the dish. But, I managed to bake at 400 F for 25 minutes. This is truly delicious. I will be making these often for breakfast. Oh, and nice piano solo.

Recently gave up smoking so am hungry and trying to do nice food. This was the most rage inducing, stressful ‘simple’ recipe I ever did - mostly my fault. My tomatoes weren’t really big enough for my egg, but managed. One egg broke when I put it in the tomato, but I persevered. All went well. As I headed to the oven the tomatoes fell over in the slipper olive oil and tipped out all the ingredients. Tried to salvage the situation and replaced one of the eggs. Just looked in the over and an egg has just come out of the tomato altogether and is now sat baking alone at the bottom of the tray. I had a real tantrum and honestly wanted to angrily tip it al in the trash I got so mad.
