I hate that Jamie Olive Oil thinks egg fried rice is "associated with street food" & is "unhealthy". What???? It's not unhealthy!! It's literally just rice, egg, some vegetables, & salt.

Late, but that kind of baffled me too. Granted most of the things he did here baffled me, but that in particular was confusing. In fact, wouldn't adding in several spoonfuls of a very sugary condiment make it less healthy than before? Certainly I feel like it'd be less healthy than just adding chilies or regular chili sauce. Then again, whenever I see him cooking a dish from an Asian country (or really just about anything outside of the U.K. and maybe France or Italy) it comes off to me like he just views it as inherently inferior/unhealthy and something he needs to make healthy with asinine "improvements."

possibly because it's fried and eggs have a lot of cholesterol and fats in them. of course after one trip to your family doctor to get advice, or a quick google search, you realize eggs have one of the healthiest fat contents. and that just because it's fried doesn't mean it's served with a glass of frying oil... but y'know. you can't convince someone who doesn't want to listen.

When cooking properly with a wok, the heat spreads evenly throughout the food. In a saucepan, you might get a flat sort of burn on the bottom of your food. In a wok, the food is constantly in motion so you get nice tiny "burns" that add flavour. That's why you constantly toss the food in a wok. The round shape helps keep the food in motion and add flavour.

First of all, Olive oil has a different smoke point aka lower heat tolerance to cooking oil normally used in Asian cooking, therefore, trying to cook Egg Fried Rice with Olive Oil, the rice would taste burnt because of the lower smoke point of Olive Oil, thats why Olive Oil is NEVER used in Asian cooking, specifically in Chinese Cooking. We NEVER use Olive Oil simply because it has a lower smoke point. It would make the food taste like burnt & technically its NOT practical for Chinese cooking. When Chinese chefs cook in restaurants, Wok Hay is very important, they usually cook at a very high temperature, so they NEVER cook with Olive Oil, because its low smoke point. Secondly, Olive Oil has a different taste to it than oil used in Asian cooking specifically Chinese cooking. Its like trying to substitute Sesame oil with Olive Oil, imagine eating Asian noodles with Olive oil, its just not authentic. Or like trying to substitute Galangal with Ginger, it wont taste the same at all. Its absolutely absurd that Mr Olive Oil here tries to pass this off as Egg Fried Rice when its not. He's not even using the proper ingredients for the recipe. This Mr Olive Oil is a insult NOT only to Asian people, but to Jamaican people, as he has appropriated Jerk Rice, & tried to make money off it, but people got angry & spoke out at Mr Olive Oil's attempt at selling something that he tried to pass off as genuine authentic Jerk Rice which it wasn't because it didn't have any authentic ingredients at all. Mr Olive Oil shouldn't even be called a chef or a professional. He is a direct insult to all the REAL professional chefs out there. How has this guy lasted this long in this industry? Mr Olive Oil should be ashamed of himself really.

My dad made fried rice with olive oil once and I couldn't eat it because the olive oil just tasted awful in it. Idk if it was a mistake because we've always made it with sesame oil

Also about Olive Oil: it has a distinct taste and smell thats gonna mess with the food. That's why you use neutral cooking oils like Canola and Vegetable. Using Olive Oil was stupid even without the low smoking point debacle

For anyone wondering, wok hay in mandarin is “guo qi (锅气). Theres other types of tofu that can be put in fried rice, like dried tofu or the jerky kind(? I dont know the english name for it) but ppl still dont usually do it. Silken tofu is usually for soups, most commonly. And Mapo, and maybe other more saucy dishes. Or simply fried on its own. Texture doesnt match w fried rice. Also fried rice im not sure abt it being street food too much, the most common street foods are bbq, like skewers and stuff, or like wraps. Street foods are usually unhealthy, but egg fried rice is not usually street food.
