Assuming this is the score from the film, Williams would have been conducting while looking at the projected film, watching and making tempo adjustments along with the movie. I would guess because of the large amount of rubato, tempo markings would largely be useless since the actual tempo fluctuates so much

Why is it all in the same key? Like, if the song is in C major, then the trumpet part should be in D major - b minor with 2 sharps.

In film scoring, accidentals are used over key signatures, as it makes it easier for the players to read the notation as they play.
