In terms of shelf life, potassium sorbate is a widely-used food additive to preserve freshness. In my home wine-making hobby, I add potassium sorbate to every batch of wine just before bottling as it will inhibit yeast reproduction and mold growth. Might be worth looking into for this type of application as well.
