    Glad to see this! I've done a half-dozen briskets on my Blaze, all very successful, including some good-sized packer cuts. Like you say, it's not an electric pellet grill, and requires attention. For the big ones, I'm up at 5:00 AM or earlier, because you really can't "set 225 and go to bed." But I'd never skip on the real charcoal flavor this delivers. One thing I found that is a huge help is a remote thermo setup with 2 probes, one meat, one fire, with the "fire" probe suspended near the meat on a clip. Then I can go inside and watch videos and read the temps at the same time. For 225 degrees, I end up with both vents 80% closed more or less, but as the charcoal depletes, it can and does change. A decent load of charcoal will last 15+ hours with ease. Anyway, great product!

    Thanks. That was one of my first cooking videos. I've been trying to tighten them up and get to the point, here lately. I tend to get into "sales" mode and give way too much info and detail. Ha....

    I currently have a BGE but I’m considering the Blaze Kamado. IMO, One of the best features is the port for temperature probe wires which you didn’t use. Especially on a brisket I want to use temp probe.

    The port is really intended for the rotisserie kit, should you opt to buy one. But it can work for a temp probe, as well

    Thanks for the video! We managed to get our hands on one last year. My only regret is not buying all of the accessories for it because they’re no longer available. Haven’t used it yet but we’re looking forward to cooking brisket.

    Good to know. Thanks for the comment. Keep checking on those accessories. Those should be available again soon. Pretty much everything but the round shelf kit and half plate deflector are going back into production. The full heat deflector I’m using in this video is definitely coming back. They’re just back ordered right now. That can be used for so many things. Pizza stone, sear plate, baking stone.... that’s right, cookies on the Kamado. Bam!

    How doea the internal depth compare with a Kamado joe classic. I am about to buy the Blaze but i do not want to lose the depth from coal box to top grate that i have with my Joe

    I’m not sure of the exact measurements on the KJ. I can tell you that there is no inner sleeve or lining on the Blaze Kamado so there tends to be more depth, on the inside, than other Kamados of similar size.

    i bought a humphries vertical smoker. I set it at night and can let it run to the morning with no controller. It will slowly climb all night to 225. Can the blaze do that? I love the look of the blaze and was considering it, but I wanted more room to cook.
