Located in the city of Sakkai in Osaka prefecture, JIKKO Kitchen Knives Cutlery is one of the best and most famous companies for anyone looking for the finest Japanese cutlery.
JIKKO started relatively recently in 1901. Sakkai has been known for the past 600 years for its knife craftwork and unique technique. Unlike many other companies, foreign or not, JIKKO carefully and individually handcrafts, with only a handful produced each day. This explaining why around 90% of all Japanese top chefs are sourcing their knives from JIKKO.

    Something easier would be to take a look at Shun knives. A lot of their lines are classically beautiful and availabile world wide already (so export shouldnt be a problem) Buying at the factory may get you a better price than the 250-350 USD I paid for each of mine.

    @@psygnale although Shun’s are great knives, they are not made for the enthusiasts. They are made for ease of use with mostly VG-10 or other type rust proof steel. Downside is, they need regular honing and won’t hold the edge as well as the blue or white steel knives. Shun version knives are also very different in style. A deba is usually 6-7mm thick in the spine. Shun Deba is around 4.5
