Ingredients
Pork ribs 一字排 1200g
Ginger 薑片 5g
Shallots 乾蔥 150g ( 5-7 pcs )
Leek (white part) 京蔥 (白色) 1 stalk
Light soy sauce 生抽 25g
Dark soy sauce 老抽 40g
Rock sugar 冰糖 100g
Salt 鹽 2g
Water 水
For blanching ribs 排骨出水用
Ginger 薑 20g
Leek (Green part) 京蔥 (綠色) 1 stalk
Xiao Xing Wine 紹興酒 40g
Salt 鹽 5g

建議泰泰將排骨在鑊中滾10分鐘後轉入焗爐180度火焗一小時,關火繼續燜到幾時食就幾時攞出嚟,好鬆軟唔黐牙,好正架!
