Jhal Muri | Kolkata Street Food recipe | चटपटी झालमूड़ी | Chef Sanjyot Keer
Full written recipe for Jhal Muri
Prep time: 10-15 minutes
Making time: 3-5 mutes
Serves: 4-5 people
For bhaja masla:
• Cumin seeds 2 tbsp
• Coriander seeds 2 tsp
• Fennel seeds 2 tbsp
• Green cardamom 4-5 nos.
Method:
• Set a pan on high heat & let it heat, once it gets heated lower the flame & add cumin seeds, keep stirring & toast the cumin seeds well for 1-2 minutes.
• Further add the remaining spices, stir continuously on low flame & toast until the colour of all the spices changes.
• Now transfer the spices into a bowl & let them cool down, once cooled down add them into a mixer grinder & grind into a fine powder.
• Your bhaja masala is ready.
Assembly:
• Puffed rice
• Sev
• Chana chur
• Dry coconut
• Sprouted black chana
• Boiled white vatana
• Green chillies (chopped)
• Boiled potato
• Tomatoes (chopped)
• Onions (chopped)
• Bhaja masala
• Black salt
• Mango pickle oil
• Mustard oil
• Green chilli paste
• Lemon juice

Yess chef, here at Laxmi Nagar metro station in Delhi, a street vendor sells jhalmuri, he not only just uses pickle oil but the mango pickle also and it tastes just awesome. Thankyou for the good recipe🙏 Love from Delhi.
Hello YFL family, this is indeed a nice recipe. Just a suggestion for the "bhaja moshla"- it can be made with 3 masalas also jeera, dhaniya and 1- 2 dry red chilli the process is same and green chilly paste can be substituted by finely chopped green chilly. This will reduce the amount of moisture in the dish and keep the muri Crisp for a little longer. I really appreciate the effort and research that goes into each recipe. By far my fav is - "Kolhapuri misal". Thanks for sharing these recipes with us.

Very well made Chef Sanjyot, you made made sure that all the key ingredients are covered. Yes cucumber is a very important ingredient, it works like a palette cleanser and cooler while munching on this spicy snack. One ingredient that you can add is a few dry red chilies while making the " Bhaja Moshla" Great Stuff !! My mouth has starting to water, gotta make this today.

Loved the way you pronounced bhaja ‘moshla’..spot on! 😊 And loved the recipe. Am a Bengali from Kolkata and have grown up eating this. Just one thing - one main ingredient of bhaja moshla is also dry red chilies, which you missed. And the way I know, in my family, it’s always jeera and red dry chili, dry roasted and then powdered. This is also sprinkled over mixed vegetables and bengali chutneys.
My childhood ❤️ . My nanu used to make it everyday post his office . He passed away very long time back but we still miss jhalmuri by our nanu . He was the best Nanu

The recipe is so good, although I'm not bengali, but I've tried jhal muri many times and it's one of my favourite dishes, I got so many secrets to make it more tasty, but some ingredients like kachchi Keri and peanuts were also used in this recipe, I guess it can increase the taste, but thanks alot
