Japanese-Style Hamburg Steak

This Japanese-style hamburg steak features the juicy flavors of mixed ground meat complemented by the refreshing taste of sudachi and grated daikon radish. The addition of mushrooms and wood ear mushrooms enhances both the texture and umami, making it a healthy and satisfying dish.
Using agar powder, the dietary fiber in the agar helps to encapsulate carbohydrates and fats, reducing their absorption in the body. This makes the hamburg steak enjoyable without the guilt. The mixed ground meat, balanced with beef and pork, is rich in essential amino acids, B vitamins, iron, and zinc, aiding in recovery from fatigue and boosting the immune system. Mushrooms and wood ear mushrooms promote a healthy gut, rich in vitamins and minerals. The digestive enzymes in grated daikon radish help regulate the stomach, preventing post-meal heaviness. The tangy flavor of sudachi enhances the hamburg steak's umami, while the aroma of shiso leaves stimulates the appetite. These Japanese flavors come together to create a delightful and elegant dish.
Enjoy this light and refreshing Japanese-style hamburg steak with your family. It pairs perfectly with rice, providing a fulfilling meal for both the heart and body.

Agar powder 1g
Water (for agar) 1 tablespoon
Breadcrumbs 1/2 cup
Milk 2 tablespoons
Egg 1
Salt a pinch
Black pepper a pinch
Nutmeg a pinch
Olive oil as needed
Sake 50cc
For Topping
Grated daikon radish 300g
Shiso leaves 9
Japanese Sauce
Sake 3 tablespoons
Sudachi (or lemon) 8g
Mirin 2 tablespoons
Soy sauce 1 tablespoon
Sugar 1 teaspoon
Butter 10g
Side Dish
Broccoli 60g
Olive oil as needed
Zucchini 100g
Salt and pepper a pinch
Tomato 120g
Instructions
1. Finely chop the onion, and use a food processor to finely chop the wood ear mushrooms and mushrooms.
2. Sauté the onion in a frying pan until translucent, then add the wood ear mushrooms and mushrooms, cooking until done. Allow to cool.
3. Soak the agar powder in water and the breadcrumbs in milk.
4. Cook the broccoli in boiling water with olive oil, then drain. Chop the zucchini and sauté with olive oil, seasoning with salt and pepper. Cut the tomato into wedges. (Tip: Cooking broccoli in water with oil increases the absorption rate of beta-carotene.)
5. In a bowl, mix the ground meat with salt and pepper. Add the beaten egg, soaked agar, and breadcrumbs, then mix well. Add the cooled onion, wood ear mushrooms, and mushrooms, and mix thoroughly.
6. Divide the mixture into three portions and shape into ovals, making sure there are no cracks and pressing a small indentation in the center. Place the patties in a frying pan greased with olive oil.
7. Cover the pan and cook the patties over medium heat until both sides are browned. Once both sides are cooked, lower the heat and add sake, steaming the patties.
8. Grate the daikon radish and lightly squeeze out excess water. Finely chop the shiso leaves.
9. Once the patties are cooked, place them on plates. Add sake, sudachi, mirin, soy sauce, sugar, and butter to the pan, heating until the sugar and butter are melted to make the sauce.
10. Serve the hamburg steak with broccoli, zucchini, and tomato on the side, pour the sauce over the patties, and top with grated daikon radish and shiso leaves.
