To answer the question: The chickens in japan have enormous health regulations upon them and eat a highly varied diet including spices such as paprkia (which can add a red, orange or even pink hue to the yolk. The yolks can be held in the hand without breaking due to a superior protein content. Japanese eggs are denser, richer, and sweeter with less sulfur. In fact the health regulations are so high the chickens are raised without antibiotics.

It’s amazing how this cake is actually made of prawns, scallops and eggs so beautifully whipped. End result is a soft cake.
