JALAR AAPAM / JAALAR MURTHABA - Basically it was a pancake and can be serve with or without stuff in different formats. This Jalar was very tasty and soft in texture.
Jaalar Appam / Paratha is very soft and delicious net Crepes recipe, which can be served as breakfast or dinner. By traditionally, this food was served as a respectable meal among the guests.
It can be known as different names by various regions as, jhalar, jaloor, roti jala, Malaysian crepes, net / lace pancakes, jaloor Aapam, jhalar paratha, jalar murthabak, etc.,.
INGREDIENTS:
FOR JAALAR (PANCAKE CREPE) BATTER
• All-purpose flour (Maida) 2 cups
• Fennel seeds 2tbsp
• Shallots 50gms
(Grind it and extract the juice)
• Salt as required
• Eggs 2no's
• Plain Water ¼ cup
(Use coconut milk also)
FOR STUFFING:
• Oil 2tbsp
• Onion 250gms
• Carrot 100gms
• Salt as required
• Turmeric powder 1tsp
• Chilli powder 2tsp
• Fennel powder 1tsp
• Coriander leaves
• Chicken 300gms (Can be use chopped veg or minced meat)
• Oil 2tbsp
• Ginger garlic paste 2tsp
• Turmeric powder 1tsp
• Chilli powder 2tsp
• Salt as needed
• Eggs 3nos
• Milk 2tbsp
• Salt ¼tsp
• Egg 2no's for egg wash at final stage
• Ghee as required
SUGGESTIONS:
- Use Jaalar Cup / Dispenser. It can available in all Utensil shop. Here I used silver cup with small hole.
- Now this Dispenser is available in online shops like plastic cups with 3 holes or 5 holes.
- If you have a plastic bottle you can pierce its lid and use it same as well
- The batter should flow well through the holes. *If it falls like drops, add ¼ cup water to thin down the batter (DON'T MAKE IT AS TOO RUNNY) and strain the batter then it should flow easily through the holes.
- You could even add a pinch of turmeric powder or yellow color to the batter. Also, you could add a pinch of saffron for a nice aroma. This will make the crepe look yellow in color.
- You can add a coconut milk instead of plain water to mix the batter. It will give more richness to the jaalar.
- You could have this plain jalar roti/aapam just like this with any of your favorite (veg or non-veg) curry or if you are in a mood to impress your guests, stuff the crepes with veg or meat filling of your choice.
- Traditionally this jaalar can be served with wattalappam. Please check it out ( • Vattalappam | வட்டலப்ப... )
