STUFFED SHELLS
1½ lbs Jumbo Shell Pasta, about 62 shells
Sauce:
Olive Oil
½ Onion, finely chopped
3 cloves Garlic, finely chopped
2 qts Tomato Sauce
¼ cup Fresh Basil
Salt & Pepper to taste
Filling:
2 lbs Ricotta Cheese, whole milk
4 Extra Large Eggs
16 oz grated whole milk Mozzarella, reserve 4 oz. to sprinkle on top
6 oz grated Pecorino Romano Cheese, reserve 2 oz. to sprinkle on top
1/3 cup Fresh Parsley, chopped
¼ cup fresh Basil, chopped
Salt & Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    I dont think she realy believes how good she is.where ever she grew up in italy she had a great grandma and mother I am one of 7 and we never said what are we having.we always said when is dinner ready and was told when it's done.home cooked food is best and way to go foreward my mum had so much in a day to do no easy washing machines etc yet always had time to prepare evening meal

    If your lucky enough to be Italian and all your relatives can throw down in the kitchen it's kind of like having a bunch of Gina's! Sadly my grandmother and all my great aunts and uncles are gone now, and my mom and her cousins are in their eighties but they can still cook and they've all passed it on to us. I love watching her and I choke up with joy remembering all of them! Ciao

    Connie Crawford, I believe Americans are very grateful and blessed for the love and devotion put into these recipes, such a treasure. Most of Americans enjoy and appreciate the Italian cuisine...I can’t think of anyone of my friends that doesn’t love an Italian dish. I can’t wait to do a food tour of Italy, It’s on my bucket list. I just hope I can be guided by someone as fun as “Italian Grandma” to give me the tour. Americans love this stuff.

    My grandmother was born in the late 19th century and emigrated here at the age of 16, to marry the brother of her sister’s husband. They were a poor farm family in Ischia. My grandmother could not read or write, but she could sew and man, could she cook. And so could my mother. When my grandmother was sick and in the hospital, she wouldn’t eat the food. My mother would cook whatever she wanted, and I would carry that covered dish 4 blocks to the hospital every evening. Love and devotion to family, to her dear mother.

You're thee absolute BEST! Stuffed Shells were a special treat made on special occasions in my grandma's home. On Christmas, she would feed family after family.     Such a blessing to watch this video. I never did get a chance to meet my great grandmother, and I did not live close to my grandmother to be able to learn how to cook Italian. So thankful that you take the time to share your love of cooking and now I get to share your receipes with my family.     This is a beautiful thing. I hope your grandchildren and family appreciate you ! I am half Italian and half Polish. My Polish grandmother taught me how to cook her country way , but unfortunately my other grandmother did not do so much. It’s important to keep your family heritage for many reasons.     I can't begin to express my feelings watching these videos. My very Italian grandmother was my best friend. I lost her when I was 11 and at 27 years old now, there isnt a single day I don't miss her and think of her. These make me cry tears of happiness because you remind me so much of her. These videos bring me so much happiness and comfort.... And hunger. ❤❤❤

    You never fail to make me hungry. I wish that I had my grandmother still with us. She was a great cook and baker. She learned a lot from watching her mother cook, especially in the depression of the 1920s. I love and I miss her so. I learned some of my recipes from her. I hope that your family knows what a true treasure and family historian that you really are.

    She is so cute. I am Native American and I am here so I can make my pasta shells stuffing and sauce authentic. I would hope if anyone is trying to make some good fried bread and red Chile stew they would search for authentic Native American foods.     Polenta is not so good. What makes it good is what you put on. My advice: ragu or a sausage with mushrooms, garlic, parcel, pepper and milk cream. P. S. these are all common recipes for me (I'm Italian)

    I discovered your videos a few months ago and I can't stop watching them. Your recipes are amazing! Love them. You put a smile on my face when I watch them. My parents were in Italy way back when and my mother brought back some Italian recipes, a meatball and sauce recipe that is amazing. Growing up in a big city, not NY, having Italian food available around the corner, and now watching you, brings such a smile on my face. I unfortunately live in a rural area now, and not being able to get the right ingredients can be quite annoying. That's okay though, because when I do go home for a visit I stock up.     I've watched a lot of Grandma's videos.....I wish I could reach through the computer screen with a spoon and take a big dip...with Grandma's permission of course....Thanks You Grandma for making such delicious looking food.

    My husband talked about his Grandma making stuffed shells for years. I admit I was completely intimidated just thinking about it. Stumbled (YAY!) upon this youtube channel. I watched the video once or twice and wrote down all the directions. I followed it to the letter and it turned out AMAZING! My husband ohhh'd and ahhh'd for days. It made a big batch, one 8 1/2 x 11 and then another 4 x 4, which I froze. So good! Thank you for teaching us all!

    I just listen to her voice while working on the computer. It reminds of being a child and visiting nonna e nonno. Nonna would spend all day in and out of the kitchen and sounded.. just like this. So glad you make these videos, thank you.

    My husbands grandfather was from Italy so all of his aunts make recipes like yours! Cooking has always been big in my family and for years I’ve been trying to practice making Italian recipes to impress everyone ! So a wife and mother from Michigan thanks you for sharing!     Having made this a few times I’ll tell you that you can put the stuffing in a gallon ziplock bag and cut a corner off to squeeze it into the shell. It’s easier for me but she’s on another level.
