I used to work at a crumble cookie as a quality coach. One of my jobs was to make sure "every"cookie that left the building was of crumbl cookie gourmet quality and talk to corporate about our stores quality. I noticed some cookies dough with a certain type of base weren't cooking all the way through, so I started temping all of the cookie right after they came out of the oven. From there I realized almost every cookie that we were selling never came up food safety and food standard temperature. I brought this up to my GM they told me not to bring in up with corporate, because they didn't want to get the store in trouble. I choose to bring it up to corporate against my GMs wishing because I rather " get into trouble" with the crumbl cookie corporation then with a food health inspector. The conversation I had with corporate explaining how the cookies weren't tempting to food standards ended with them just basically telling me that's how they're supposed to be. Corporate told me to tell the customers " Here at crumbl cookie, our cookies are freshly baked and gourmet! They are golden and crunchy on the outside with a soft moist warm center!" ---- I quit my Job that month.

Ahem from an outside source. My closest crumbl location has a 10 minute timer to let the cookies cool down after the ovens. As someone who's in the business of cooking biscuits, which are close to cookies, I can confirm that the cooking process does indeed destroy the flavour and mutes it significantly. That doesn't mean you make "medium rare" cookies, it means you have to double the flavour ingredients in order to get the flavour you want AFTER the cooking is finished. These people have no idea what's going on.

The flavor of the cookie comes from a reaction between the sugar and the heat called the maillard reaction. Through this reaction, the cookie hardens, turns brown, and gets its distinctive smell and flavor. You need to cook a cookie all the way through to unlock the true flavor of a cookie.

Former Crumbl Employee here. The way Crumbl cookies are made means that when they're fresh out of the oven the inside is still baking for about 20 minutes or so. Typically they let them set on a rack to finish, but sometimes during a rush they'll push them faster, which leads to the unfinished center. They straight up don't solidify in the middle before then, and you're not supposed to serve them until they do. I tested this while I was there too, having a cookie fresh off of the pan and then trying again after 20 minutes and an hour. You got served an unfinished cookie. Holds true for most warm cookies btw

Ex Crumble Employe here. Half of the workers thought something was wrong with our cookies as they kept coming out almost raw for several weeks. Our manager did nothing about it, eventually called an oven person, didn't fix the problem. The recipe is meant to underbake them. They are made so big and so sugary that they don't expect you to eat it fully the first day. If you let them set for a day or even sit in the warm box for 10-15 minutes it is so much better and still tastes the same. Was not proud of working here. The number of concerns I had for the customers or number of calls we had about our cookies were huge stressors and made us as workers look bad. P.S my location's manager was 20 and the owners were new parents who were constantly busy with their kid versus the store. Yeahhh no.

Yes never touch a crumbl cookie. I say this as an employee. Now in my store they’re never “moist” in the middle. Obviously they didn’t fix their baking instructions based on location (since elevation above sea level, humidity, and a couple other factors do effect baking) and they underbaked them. They can indeed bake out properly and you just went to a bad store with worse employees. The reason you don’t want crumbl is because they’re complete crap, ridiculously overpriced, and you get like 3 days worth of your sodium and sugar intake in a single cookie.

If this is the Crumbl norm, I'm a lot more thankful of the Crumbl around where I work cause their cookies are near perfection. They're right next to a Cold Stone, though, so I guess the competition forced them to.
