Hey mate, as a mechanic I love diy videos. This not a roast but hopefully helpful information. Given you mentioned about the last wheel alignment not being good with the adjustable arms and then wondering, light loose steering with the fixed arms, I'd say that there was to much caster compensation with the ball joint adjustment which put the fixed arms in a position of negative caster causing the steering issues. Hey mate I just recently did my rack end aswell , and to get to the join to unscrew it you can just turn all the way to the right which brings it out and gives you room to unscrew it
