Well it depends on the costs of the place especially on the housing. But Italy and Florence os a nice place to do a postdoc

Depends on the postdoc and the country. For example Humboldt may not take taxes but DAAD prime may do. But the non tax postdocs often pay less than the tax postdocs. Yes university of Tokyo is well known. Postdoc will look good from there. Make sure to publish some papers

Chemistry is a nice subject to study. You can become a chemist after that. You can become a research scientist later on if you do masters or PhD.
