Is Vegan Cheese The Future?

In 2020 in Switzerland more than 200,000 tons of cheese was produced. With around 700 varieties it is the most important product of the Swiss dairy economy. But the days of the cheese monopoly made from animal products seems to be limited. More and more new companies are producing cheese-like alternatives from non-animal products in order to serve the rising demand for cheese alternatives. We visited two vegan cheese producers in Geneva and the Bernese Oberland who show us what "vegan" cheese really is, how it is produced, and most importantly, how it tastes.

    7:44 cashews contain 8g per 100g saturated fat (still around 3x less than dairy cheese).

    Cashew processing is brutal and wasteful. ONE nut per fruit and the acidic juice from the fruit causes skin irritation to the workers.

    @@unknown_8588 We did not evolve binocular vision to hunt broccoli. Humans evolved away from the other apes because we took advantage of the extra nutrients and calories from meat. Our digestive tract is shorter like other meat eaters. No one advocates torture of animals but I have no problems in a swift kill for food.

    I live in Switzerland and I love both of this products! I am not vegan but I love to alternate my diet. After all, for me - taste is a childhood habit. So preferring milk cheese to vegan cheese is just being more used to it.

    I've been vegan for 18 years and was vegetarian 10 years before that. My first seven years vegan I just did without dairy because the fakes were all nasty. Then I discovered a couple good ones. Now there are about half a dozen vegan cheeses I buy regularly. I would like to learn to make them.

    I was today years old when I learned Swiss-German is a language that exists. It's so similar to German, but with a few differences and an accent I've not heard before, until this moment.

    that problem was solved decades ago. Most rennet is non animal based these days even in regular dairy cheese because the quality and reliability is far better than animal based rennet.

    Rennet is reliably produced with thistle plants, and has been used to make some dairy cheeses for a while now.

    My faves here in the U.S. : Daiya cheddar shreds, and mozz shreds. Follow Your Heart mozz shreds. Also their grated parmesan, Bleu crumbles, feta crumbles. Violife Parm wedge ( others of their brand have a chevre aftertaste and I hate chevre.) Daiya cheddar topped with Violife Parm and baked on a ziti tastes a bit like asiago. Tofutti cream cheese and sour cream. Earth Balance soy butter. I prefer the organic. So Delicious cashew milk salted caramel cluster ice cream. I take it out early so it gets a little melty. It will break the mind of any omnivore. They also make a topping called CoCoWhip which I sometimes eat like ice cream. LOL. Follow Your Heart Veganaisse. I prefer the grapeseed one. Just Egg for scrambling, Ener-G Egg Replacer for baking. Maple syrup instead of honey. Veganism no longer requires sacrifice. I've had multiple omnivorous chefs leave my table raving.

    Great video love on the info about vegan cheese 🧀 Good luck taking on the dairy industry vegan cheese will never surpass the dairy industry. I support having vegan cheese but having it be the main source of alternative dairy not possible. The dairy industry is powerful.

    Not chemical. They showed you how it's made. They extract the "milk" from the cashews then proceed as per usual. Watch some vegan cheesemaking vids for the home kitchen.

    @@wideawake5630 1. Vegans don't even come close to outliving anyone. They without exception end up with serious health problems. 2. B12 supplements come from ANIMAL SOURCES and by definition are not and cannot be vegan. 3. If you require supplements for your diet to not outright kill you its not a safe or healthy diet

    Have you tried alternative cheeses? It's literally made the same way. It would be like chocolate icing vs strawberry icing. They're both still icing. And they are getting closer and closer to really making some great alternatives. (Mozzarella is the only cheese I cannot seem to find something close) but vio life cheddar cheese slices make a BETTER grilled cheese sandwhich. I legitimately prefer that cheese. You never know! And there's so many different kinds out there now its insane. But no pressure tho! Just please don't diss it because it's labeled "vegan." Too many people think just because it's vegan it must taste horrible. And as a reference.. Oreos are vegan. So no not all vegan food tastes bad, and it's not all healthy either 😅

    I tried making vegan cheese because it was a big trend, but omg it is alot of trouble to do plus the store sold ones are so pricey. I don't eat dairy and have never liked cheese so it doesn't make sense to imitate it with plant ingredients. I don't need melty cheese for pizza, all I use is pesto or tomato sauce, herbs and spices.

    It sounds like a very tough product to make at home! But glad you've found your perfect pizza :) Have you tried using vegan sour cream or cashew cream for your pizzas? It adds some creaminess for sure

    That’s you, and that’s great. But reality is so many ppl were brainwashed to eat cheese in excess. It’s pushed so much in society, cheese this cheese that ect. Therefore it’s for ppl love cheese and I’m sure it’s Also to show that anything ppl eat vegans can too, cruelty free

    If it tastes like cheese and is nutritious like cheese, why not? People tend to think cows are not killed for milk, but they certainly are, and thats really, really sad. I'm NOT a vegan by the way, but I welcome animal friendly alternatives wherever possible.

    i`m vegan myself and definielty enjoy a "cheese" every now and then... but after watching a documentary about how cashews are sourced, i`m really trying not to go for these ones!! the workers suffer permanent damage to their hands from the corosive liquid during handling the nuts, unless its a solid fair trade company... which one can only hope this one is seen as theyre all about making a positive difference in the world...

    If it's seasoned we'll, it tastes great. I make vegan cheesecake, and it's to die for. When one can no longer tolerate dairy, this is a wonderful alternative. Try it some time 😊

    I think it’s a future environmental disaster for Vietnam or any other country that grows cashews. Anything grown in excess for a hungry international market always does - palm oil, avocados, quinoa, New Zealand lamb, Californian almonds etc

    @@wendydann8180 I would not excuse the industrialised meat and dairy industry for their part in climate change and environmental destruction. We need to support those producers doing the right thing or aiming to do the right thing and just be mindful of 'silver bullet' solutions, like cashew nut cheese. Veganism isn't going to solve climate change, especially in traditionally dairy consuming countries. Reducing consumption will help, more in line of what it was a hundred years ago. I was very encouraged that many of the younger generation in Asia were looking to return to non-dairy 'milks' as they suited them better.

    @@tshampoo7762 I don't believe any of the proposed solutions to avoid environmental cataclysm suffice to avoid it, but a combination of them all. The problem is how to balance all those approaches to make more sustainable use of the available resources in this planet. In few words, all the proposed approaches for sustainable environmental conservation are necessary but not sufficient conditions to help the environment and continue sustaining life as we know it...

    @@DWFood they've started to "clone/grow" meat by itself in a lab. But there's worry that people won't accept it due to the fact that it comes from a lab. But we're really pushing boundaries to figure it out. So I think its possible. I mean we already have vegan chicken down. And beef depending on the recipe. I got a vegan Philly cheese steak and beef slices we're PERFECT just wish I knew how they made it :,(

    @@DWFood Near future is very uncertain but 100 years down the line, maybe things will be so different that the concept of producing food on land and farming animals could be completely out of discussion. The solutions we can think of right now is very limited to what we know now and can do right now so thats why we can’t tell what would be the answer in the future. We need to know what the technology available in the future can do first in order to see what has a place in our future and what doesn’t.

    @@DWFood I do believe it has a place in the not too distant future. Many people, especially in the USA, do not realize that for many years, they have been consuming plant based cheese with their hamburgers from the traditional (internationally known) burger joints (not want to mention them here for obvious reasons). Even some of the single wrapped cheese bought at the stores to consume hamburgers with home griller burgers, are plant based cheese and many are close to plastic, in my opinion. People need to learn the facts and realize that vegan products that resemble animal based products have been in the market for years already and the industry is trying to catch up or get ahead. In fact not even the burger part of the sandwich is 100% beef but high percentage is vegan based in the mayor (internationally known) burger joints which contained what they call soy meat. Soooooo, go figure...

    @@DWFood all I know is that cashew production will never be able to satisfy demand if any significant amount of people make the switch. it's pretty much already a luxury product. and from what I've heard it's also harmful to the people that process them. A product based on grains or pulses/legumes that we already grow in abundance and can be grown in way more places would certainly be better.
