Having just found your channel, I'm now binge watching. Um you don't mention Wasabi for a bit of zing. But next time I will try chillies. I'm wandering around too, and carry my own smoker. Also you probably know this, but have a good supply of newspapers, and soak them in the sea, and wrap around the fish. Then onto the coals. Completely cover the fish, and hey presto, steamed fish.
