Great video! I'm not european but I like underletting the mash because it eliminates dough-balls entirely and gets all the air pockets out of the grain. Hmmm I haven't brewed a stout in a while. Might have to soon. Cheers!
I do underletting. It's less time getting a brewers steam facial. lol The main reason I use underletting is I need to have rice hulls layered in before the malts go in to seal up the fine spacing I have between the false bottom and the kettle. I brew by myself and trying to balance the grain pouring and stirring with the other hand gets me frustrated as well.
