    i had a chance to taste barbeque/kebabs of different cultures from far east asia, central asia, middle east to whole europe and america.. the biggest failure/mistake is always 'very hot charcoal'.. the very same is valid for Iran (I've stayed there long enough) as well. watering meat is not a great technique. what you should do is to wait till charcoal settles down and then nothing will get burned. I can understand that hellfire charcoal provides a much quicker result yet it is not comparable with the taste you will get in case you will grill with less aggressive heat.
