Iranian kebab is one of the most popular and well-known dishes in Iran, enjoyed by people from all walks of life. Its history dates back to ancient times, and it holds a significant place in Iranian cuisine. The word "kebab" itself is derived from the Arabic word "kabāb," which means "burning" or "roasting."
The origins of Iranian kebab can be traced to the time of the Achaemenid Empire (550-330 BCE), where it was initially prepared as a meal for soldiers and hunters. The practice of skewering meat and grilling it over an open fire gradually spread across the region and evolved into various regional styles.
The main ingredients that constitute an Iranian kebab are high-quality cuts of meat, such as lamb, beef, or chicken. The meat is usually marinated in a mixture of spices, yogurt, and lemon juice to enhance its flavor and tenderness. Additionally, onions, tomatoes, and peppers are often included on the skewer, adding a delightful blend of flavors.
The cooking method of Iranian kebabs is an art in itself. Traditionally, they are cooked on a Mangal (a grill) over hot charcoal, which imparts a smoky aroma and distinctive taste to the meat. Skilled kebab chefs, known as "souvlaki," meticulously tend to the grill, ensuring that each kebab is cooked to perfection.
In Tehran's Grand Bazaar, a bustling marketplace located in the heart of the city, kebab stalls and restaurants have a prominent presence. The aroma of sizzling kebabs fills the air, enticing visitors with its irresistible allure. The bazaar offers a wide variety of kebab options, from traditional skewered meats to unique specialties like Barg (marinated grilled fillet) and Joojeh (grilled chicken).
Iranian kebabs have also gained popularity beyond the borders of Iran. Many countries, particularly in the Middle East and Central Asia, have adopted their own variations of kebabs inspired by Iranian cuisine. These kebabs often incorporate local ingredients and flavors while preserving the essence of the original Iranian kebab.
In conclusion, Iranian kebabs have a rich historical background and hold a significant place in Iranian culinary culture. Their popularity in the Grand Bazaar of Tehran and their influence on kebab variations in other countries are a testament to their enduring appeal and delicious taste

First off, they need to install some lights outside so they don’t have to work in the dark. Secondly, besides their hygiene which is terrible, I’ve notice they’re getting some sort of gross grinned up meat from the tin can for Koobideh. What the hell is that all about?
