I have found one of the quickest and easiest Instant Pot meals is a pork. Many times I will find the small 1 lb. pork loins or country ribs on sale and I stock up on a few in the freezer. That way I always have a quick an easy start to dinner. Now you can easily do this Sous Vide or in the slow cooker as well, finishing it off with the sauce.
Now as you can see, tonight I did country ribs that I actually cut myself from a pork shoulder. Country Ribs aren't ribs at all, but meat pieces cut from a pork shoulder. They come out so tender and moist in the Instant Pot. They literally fall apart as you try to remove them..
So give me some feedback on them if you try. I can't imagine why you wouldn't, these are amazing.

Dry Rub:
1/2 cup paprika
1/4 cup garlic powder
1/4 cup brown sugar
3 tablespoons black pepper
2 tablespoons chili powder
2 tablespoons onion powder
2 tablespoons salt
1 tablespoon dried oregano
1 tablespoon cumin
2 teaspoons dried thyme
2 teaspoons dry mustard
2 teaspoons ground coriander
1 teaspoon allspice
1/2 teaspoon ginger
Mix all ingredients together and keep in an airtight container/jar till used.
6 Country style ribs (coat with dry rub and refrigerate overnight in zip top bag)
2 cups water
1/2 teaspoon Better Than Bouillon Ham Base amzn.to/3hxfU2r
1/2 teaspoon Better Than Bouillon Sautéed Onion amzn.to/3oggBQh
2 tablespoons apple cider vinegar
splash or two Worcestershire sauce.
dash of liquid smoke
Tabasco Chipotle Pepper sauce.....to taste amzn.to/3hxV7eN
Pressure cook on high for 45 minutes and Natural Pressure Release for 15 minutes.

I’ve done ribs in the ip but a couple things I think will make them better - marinate them with the dry rub (I’ll check yours out), and also add some ACV. The ones I did were good but the fat didn’t break down as much as smoking/grilling which of course we like better but sometimes you just want ribs quick.

Hey Greg, I just so happened to have all the ingredients for your recipe here and I am waiting for the instant pot to finish coking as I type. I'll let ya know! I plan on putting them on broil for about 4 minutes, with sweet baby ray's bbq sauce, to finish!

I'm thinking about smoking them for 2 to 3 hours the putting them in the instant pot. Have you ever tried that ?

I think that would be a great idea. It will cook the smokiness right into the meat a lot better.
30 minutes with slow release works best

To this I'd say I tried before the same CSR and set it at 25 mins and they were tough in many places still. It was not pleasant. I even had company. uhg. So I don't know about thirty mins, 45 sounds better with slow release. but you very well could be spot on as I am still learning this cooker.
45 minutes is definitely overkill. You now have pulled pork..
I watched this to learn how to cook country ribs in an instant pot. You taught me nothing.

I have to barge in on this. Did you walk away from the video or just sleep through it? How is it that I sure received at least three or four different ways, as Greg made suggestions for other paths along the way, and kept in the direction of his own preference to cook CSR in the Instant Pot. I bet your a blast at parties.
