Use 2 breakers each double 40 amps
Each breaker deliver one set of 8/2 electrical wire from the electrical box to the tankless water heater,

I'm installing this exact same Rheem 18kW RTEX-18 tankless electric water heater. My question is this... If the circuit breakers are not within sight, I realize there needs to be a means of disconnect nearby. But with 4 wires coming from (2) 2-pole breakers, what type of disconnect safety switch do you install? A 4-pole enclosed disconnect switch? or perhaps (2) 2-pole disconnect switches? And if the total current between the two circuits is 70A, do you use a 100A disconnect swtich enclosure (4-pole) or would you use (2) 40A disconnect switches? I've tried going through RHEEM, but they just refer you to a different company altogether. Any help would surely be appreciated!

Not sure if this is too late as a response to your comment, the NEC allows having a circuit breaker 'lock-on' device instead of the disconnect (2020 NEC 422.31 B). Provide one at each breaker.

Did I miss the maintenance valve kit? How are you going to clean this unit of scale buildup? Also don’t see the temperature relief valve installed.

They don't require a relief valve, but the flush valve is a good idea.

For tankless water heaters you almost always need to have a water softener of some sort, not sure scale buildup should really be an issue.

What about desalination this every year now your going to have to cut them lines every year to do it. That's number one reason tankless heaters don't last long from not properly maintaining them and maintaining them is only desalination the unit once a year for hour to hour and a half.
