    As the dates on the barrels rolled by it struck me that one was from 1916. France was literally fighting for survival during WW1 and yet Hennessy was able to pull off a vintage. The French do have their priorities...lol.

    Fair point. Although, it could well be that this barrel was purchased by Hennessy long after the end of the war. What happens is that local growers or small distillers would often store old barrels of eau de vie somewhere in their attic or on their properties and at some point decide to sell the family's 'treasure', when grand-pa passes away or when they need some cash or else. they'd normally knock at a big house's of Cognac for this with a sample, probably offer it at different houses and take the best bet. that's how houses get the majority of their old eaux de vies, although they sometimes (often) keep those old Cognacs themselves for another little while, use some of it in a blend and keep the rest of it, etc. Hennessy is the biggest buyer of old Cognacs in the area because they need a fair bit to make and sell the XO and else around the world. Does that make sense?

    As a man who frequents bourbon, amongst other whisky’s and and is not the one to typically stray away from my grain drink family, this French gentleman giving us a quick show and tell of a Cognac distillery has been more than enough to convince me to try a good cognac. I have a lot of whisky sipping friends that say brandy/cognac is one of the few liquors aside from whisky’s that are more than tolerable, so we shall see once I grab a bottle of Hennessy this weekend! 11-17-2021 5:23AM Eastern U.S Time

    And? How was it? There is a MASSIVE difference between XO and VS, and a very noticeable difference between XO and VSOP. For the occasional sip, XO is worth it. I think Hennessy is much better than Remy Martin.

    That was sooo cool and very much appreciated, as we are all pretty much stuck in and not traveling much these days! That is some lovely country there, and seeing all those beautiful old stills! And the very old cognac in the barrels and baskets! Fascinating! I really wanted to taste that cognac that was being poured in slo-mo near the end! Gorgeous color, and it even looked 👀 smoooth!😁

    Amazing! Hennessy is my favorite cognac. Hopefully some day I can visit and be able to appreciate all of this. It would be such an honor to be able to learn how to make something like this.

    I like both Remy Martin and Hennessy...from my experience with their XO the Hennessy is smokier and sweeter and the Remy Martin is fruitier and drier

    Just Some Guy With No Mustache agreed both are fantastic Cognacs. I think your description summaries would be about right. Rémy XO is certainly dried with loads of opulent fruit.     I wouldn't consider myself a connoisseur but it interesting to hear you mention the citrus taste that I picked up on when I first tried Hennesy. At least I know I can somewhat distinguish flavours in the alcohol now. It was a really interesting video btw, great job.

    Hope you get there indeed. It's worth it. Cognac is a great region to visit in France. Not that many visitors or tourists stop there while if you like the Cognac brandy, it's a genuine treat to stop by, meet the makers and taste the different products. Enjoy :-)

    Julien Miquel cheers Julien, recently I’ve been drinking Emperador double light brandy, Emperador Gold I mixed 2, 1.2 liter bottles with apple tea Club Mix which tasted like Nectar of the Gods Just amazing with lots of ice too one on Christmasn and one on New Years, Tanduay 5years Rum and 5years light, Fundador Ultra Smooth, Fundador, Alfonso 1, and I also was able to try Alfonso Platinum, I’m in the Philippines 🇵🇭 let me know if you’d like to try any of those there’s also Tanduay Superior 12 year rum that’s good too it’s oaky and walnutty with a hue of deep tropical fruit tones.

    Julien Miquel ahhhh well I have that available all the time anytime I want, and it’s really affordable even the higher up ones are quite cheap. I can send you some soon I’ll package it myself plus some bar foods nuts or whatever. I would say they rang from two dollars to 12 dollars. The ones I listed most of those are on the low to mid priced. I’d love to send you that Emperador Gold with the Apple Tea Club Mix its amazing 😉 you gotta take the ball from the top with a knife or scissors and put plastic over the Club Mix and put it on top of the Emperador and then balance it then you slowly slide the plastic off but be sure to balance it then after ten minutes take it apart but be sure to slant them sideways under a bowl so you don’t waste any hehe 😜 like I said it tasted like the Nectar of the Gods.....😬 with tons of ice of course. Downside you’ll get addicted 😄.

If you really want to, I can't stop you, but I'm afraid sending booze across oceans might turn out more complicated than anticipated, with customs and things, can be quite complicated. So i wouldn't bother. As I said, i don't drink a lot of spirits so it's probably not worth it. But I greatly appreciate the offer. Wish i could try those. Guess we'll have to wait until we get a chance to share a glass or two somewhere sometime :-)

    Excellent piece my friend. It really pays to visit such a place to taste the spirit through all its stages. Many forget that it starts life as a wine (just as whisky is a beer) before distillation. I do enjoy a cognac but the low abv is a problem for me. I would like it to be 43 or 46% for the money. There's some incredible age there which must taste amazing. Great video and I can not for the life of me understand the thumbs down. WT

I think the strength is a legal requirement here in France, for some reason it cannot be more than 40%, for community health issue I suppose, but it's true that barrel-strength old Cognacs would be good to see. I guess the houses don't mind watering it down a little all that much if you see what I mean ;-) Well, a lot of people have watched this video, I think it's one if not #1 result when you type Cognac on KZread! SO some people come across it and may be expecting more of a TV documentary of some sort while this is more of a raw impressions, on-the-go vlog kind of thing that some may not appreciate.     you're right Lisa. Should have said distillation in that sentence you point out. I talked about the double distillation process moments before, so careful viewers like you understand that my tongue slipped there. you're right. What I taste there is the result of the second distillation. The first thing I taste in the video, which is the actual wine, is the result of the fermentation before distillation, Thanks for feedback :-)

    Double fermentation increases the alcohol content, increases the clarity, darkens the cognac more consistently when stored in the casks. Since this idiot didn't answer your question, I did. I think he stays drunk...lol.

    sorry but Hennessy is known to have added additives in some of their products, if not all, to have them be more consistant across the board. i didnt know that until recently.. been drinking Henny forEVER and love the sweetness of it but now i know why.

    I have never tried the top of the line Hennessy however, I I do have the XO class in my bar and I must say. Keep In mind it’s personal taste, and I believe the remy Martin XO just beats the Hennessy XO.

    Could be. They're quite different styles aren't they? Rémy is a little smokier and little crisper, while Hennessy is rounder and creamier. Is that accurate? I haven't taste them side by side but would be a nice experiment

    Right! Sorry this is a late answer. Did you say 'never once'? Thought it was useless to answer this kind of comment. Didn't I mention that Cognac is made from wine, when the grapes are harvested and when, and where, and what kind of wine it is exactly, and describing what it tastes like? Didn't I say that Cognac is the result of a double distillation? The alcoholic strength and the taste of every product through different phases of the process. Doesn't the video show the stills in operation? Didn't I say how Cognac is aged, in barrels, in demijohns? My bad I didn't get a chance to get through the distillation process precisely. There would be indeed quite a bit to say about that. You warm the wine, you distill it, the swan neck, the copper still, etc. I do regret I couldn't get into all the details, my bad. B (Note: had I done so, most viewers would have blamed me for it for being too technical! yes, people find things to be negative about, do they!?). But 'never once does this info you as how the product is made', really!?

    @@Anthropomorphic Thank you :-) Glad its was useful. In most cases some distilled water or demineralized water is added indeed to reduce the alcohol percentage. This is often done very progressively not to 'shick' the eau de vie. For some very old Cognacs, the alcohol percantge naturally decreases during the ageing in oak barrels with the evaporation of the alcohol ('la part des anges' or the angels' share) so sometimes for old Cognac you do not need to add water. Does that make sense?

    I dream of touring destilleries in Cognac and then asking them to show me their "boisée" manufacturing. For the Big 4 Cognac houses I can imagine it may be larger than the distillery itself. Although beeing publicly disclosed as a legal additive by the Cognac regulation authority, it is very hard to find any information on boisée other than short explanations on what it is. Does anyone know more?

    I see what you're saying. I didn't see that as you can imagine. Now if it's anything like for wine (for large producers of cheap or some affordable wines), which i suspect it is, infusing a little oaky character into a wine to give some toasty notes, a little vanilla, coconut, etc, and softening the tannins because the oak tannins are fine and smooth, they might use some oak chips or staves that you just soak for a few days/weeks in it. Now, one important thing to note here. Is that oak chips or staves can be of excellent quality. They are generally made from the same century-old French oak trees as the barrels so it's not fundamentally different in terms of the ingredients, but it's oviously much cheaper and much less wasteful. When you use a barrel, you use a few millimeters of the oak staves that are in contact with the wine or the spirits, the rest of it (barrel staves are usually 24 to 27 mms thick) is just there to hold the whole thing together but does very little to the wine. Especially with spirits where the oxygenation effect is not as important as in wine. Evaporation plays a role, but it takes many years to be noticeable. Anyways, that my view on it, it's not necessarily a bad thing or a ruthless cheating to use oak alternatives. they can be made from excellent oak and give excellent results to obtain a very good product without it costing too much. I find Cognacs expensive enough if you ask me! You can compare this to vanilla extract for baking. If it's a very well crafted one, it can still be very nice, and it's much easier than soaking your vanilla sticks yourself for hours or whatever you do with them. Probably not as good overall, but possibly good enough to keep the product reasonably affordable. But, yes, would be good to know a little more the behind-the-scene of this.

    Thank you for your answer. You make a great point with the barrel thickness. Actually Im happy that boisee can be used since it reduces cognac prices without necessarily affecting the quality and authenticity. Producers dont want the boisee to be part of our image of cognac, which is of course understandable. Actually I am planning (just fot fun) to let thin pure oak chips (from carpentry) soak in a VS for some years. Will I get a VSOP then :))?? Kidding. The tricky part is the perfect toasting of the chips. Stuffing them into a bottle may create an interaction surface much larger than than that of a barrel. Do you know something about the degree of toasting? I guess the wood should only slightly darken, without getting burned/charred.

    @@urielnakach4973 I don't know much about toasting oak. There must be a temperature you have to reach to get the best results. You might be able to find the info online!? Otherwise, yes, nicely toasted but not too much. Are you sure your wood has never been treated with any chemical product? Then you don't need to soak for years. One month will extract everything you from your chips, flavors and a bit of tannins. If you leave them for too long you risk extracting rough and bitter tannins.

I found a very nice video in which a guy manufactures chips and puts it in whiskey ("Preparing & Toasting Oak To Age Spirits"): kzread.info/dash/bejne/aWuHqcFuoNrAcbA.html He actually shows a graph (of unknown source) in which different toasting temperatures result in different notes (oaky, vanilla, almond etc.) Very nice!

I'd say if that's that, Google were someone may sell them locally, or perhaps get in touch with Hennessy directly on their website. They might be able to help you locate the glasses with a distributor or retailer they might know in your area, or be able to ship them to you directly.     Wow, this is a good and technical question! I'm not an absolute expert in the chemistry of Cognac, but yes I you can see there are traces of copper in some of the distillates, but not in the one that is going to be put into barrels and sold. The blue distillates you see in the video are the 'heads' and what they call in Cognacs the 'secondes' (good explanation of what those are here: www.pediacognac.com/en/la-distillation-dela-distillation-enla-distillation/das-charentaiser-brennverfahrencharentaise-distillation-methodprocede-de-la-distillation-charentaise/ ) which are not used directly for making the cognac, but rather redistilled with the next batch. My understanding is that most of the traces of copper will precipitate during the aging in barrel anyway. Yes, virtually all Cognacs are blends, and generally blends of cognacs of different ages as well as different origins (vineyards), sometimes different grapes, etc. The master blender assembles different cognacs, blending some old with younger cognacs to make a consistent product year after year, and make the whole taste good too. the more expensive the Cognac, the older the eaux de vies that are used in the blend, while affordable cognacs will have a majority of relatively young distillates. My guide at Hennessy explains a little bit about this in the ZO in this interview video here: kzread.info/dash/bejne/aYmJ1rd-Y7e4ibA.html A little bit of the extremely old cognacs you see in the video are probably used in the XO to give it more depth and complexity, but a product like the 'Richard Hennessy' which costs a few grands a bottle will have more of those in it. that's probably the one you want to buy if you want to taste a blend of extremely old Cognacs, probably including some of the 100+ years ones.
