Yea, and how ten guys miss a dude standing still from 20ft with machine guns and shotguns, but the hero can hit a Luftwaffe pilot between the eyes from half a mile down with a snubnose revolver

It depends on what kind of air brake system it is - 'simple' Westinghouse brakes are/ were released by breaking the train pipe. But this is Hollywood, or its Italian cousin so logic, rationality and prototype authenticity are not going to be a priority. At least the engine is pushing the train, so the couplings are slacked off - that's the only way they can be undone when in motion....... (See how they do it in 'The Train'.)
