Indonesian Beef Rendang

Recipes at www.ciaprochef.com/wca/indone...
Rendang, one of Indonesia’s most celebrated dishes, is a slow-cooked, spicy meat dish originating from West Sumatra. This slow cooking process is used to yield succulent, fork-tender meats with rich, caramelized flavors. At the Kamandalu Resort and Spa in Ubud, Bali, William Wongso shows Steve Jilleba, Corporate Executive Chef of Unilever Foods Solutions, how to make a classic Beef Rendang.

This man, I'm very impressed by his cooking. He knows his basics of cooking, he knows his history of the food, where the recipes come from historically. For me it seems like there are, on KZread mostly, very few cooks who are not trying to cook in front of a camera, but are cooking in a way that comes from the heart, personal and close to themselves. Love it.

In my hometown rendang should cook for about 8-10 hours : fun fact in west Sumatra they boil beef for 8-10 hour to make beef dry and last for a mont, so fishermen can carrying the dish while in ocean

RANDANG (originally) or RENDANG (famous as) is authentic Indonesian cuisine originally from West Sumatra, Indonesia. its supposed to be cooked on TUNGKU made of TANAH LIAT and take hours to finish the dish and reach the perfect level of tastines. thats why its called RANDANG. RANDANG means SLOW COOKED. its famous in many other countries such as Malaysia, since there were alot of Minangnese (people from Padang or Minangkabau) went to Malaysia and reside in Malaysia. Minangkabau people has a tradition called MERANTAU (if you ever watch Indonesian movie starred by IKO UWAIS) when they are teenagers, they are encouraged to leave their hometown to gain experiences so that when they are back, they will be useful for the soceity. this culture and tradition heavily influenced Negeri Sembilan (especially) because Negeri Sembilan was originally Minagkabau's colony

dayoss GRT In Malaysia we still maintain the Minang tradition of Perpatih Nan Sebatang, a Minang Rajah rules on a throne and is given kingship through the Minang tradition from the people of Negeri Sembilan. The Minang tradition, culture and food is also alive in Malaysia.

normally I do this in some stages. not constantly 6-8 ours long cooking. 1st stage, I make till be a "kalio" (1/2 rendang >> means between "beef-curry" and "rendang" ), and the next day I ll continued to cook. or you can wait for couple hours before you continue with cooking. Advantages with this methods when you stop with cooking dry process still continued.

Have anyone tried this recipe as per the link above. 1kg of beef and 1.8 litres of coconut cream. I used some Bumbu Indonesian Rendang Beef curry paste. Started off well, transferred the mixture into the oven in a cast iron container at 85 degrees Centigrade, as per video. After two hours in the oven nothing happened, no reduction what so ever. Transferred it back to the wok and been cooking it for a total of 10 hours. Still cooking and to me I just got this pan of coconut cream mess with chunks of meat. What am I doing wrong, help please.

I kinda got tired of people claiming this food as Indonesians or Malaysians. Hey, lets just claim that we came from the same root with the same taste that old peeps whom traveled or migrated either to Malaysia or to Indonesia long time ago, introduced Rendang to their new place. I mean... lets not fight about whose food it is and just love it.

izusakay Its not only about culture source. You know, Malaysian is always try to claim everything that good from Indonesia, India and China just because there are people from those three ethnic. From Indonesia, they claim pendet dance from Bali, Reog from Ponorogo East Java, Rendang from West Sumatera, Tortor dance from Batak ethnic. That is weird country. Yeah Indonesian is like break dance from US, or kabuki from Japan, but we will never claim those from Indonesia...That's the Differences....
