Mix gently from bottom to top to preserve volume.
Baking pan d 20 cm
Bake in an oven preheated to 170°C for 40 minutes.
Let cool down.
Cut off the top and bottom layers of the biscuit.
Cut into 2 equal parts.
Strawberry Yoghurt Mousse:
Strawberries 200g
lemon juice 15g
Sugar 180g
Bring to a boil.
Let cook for 2-3 minutes.
Grind the strawberries with a blender.
Gelatin 10g
water 60g
Leave on for 7-10 minutes.
Add gelatin.
Stir to dissolve the gelatin.
Leave to cool to room temperature.
Cream 400g (fat content 33-36%).
Beat until soft peaks form.
Natural yoghurt 180g (or sour cream).
Mix the whipped cream with the strawberry yoghurt mixture.
Mix until smooth.
Soaking:
Milk or cream 100 ml + powdered sugar 1 teaspoon.
Place the cake in the fridge for +-4 hours (until the mousse sets completely).
Cream:
Mascarpone 300g (or any other cream cheese).
powdered sugar 60g.
Cream 150g (fat content 33-36%).
Beat until smooth.
Spread the cream on the cake.
Sprinkle with freeze-dried strawberries.
Garnish with fresh strawberries and mint.

оченьздорово. и большая ложка дегтя: бисквит единственное тесто которое нельзя трясти как это вы делаете иначе оно осядет. Поэтому увиденному не верю.
