This avocado and eggs salad is very simple, healthy and tasty. You'll only need 15 minutes to make this delicious and nutritious breakfast that we'll keep your energy up all morning. I used a light mayonnaise but you can replace it with sour cream or Greek yogurt. This delicious breakfast will make your day!
Ingredients:
4 eggs
1 avocado
3-4 tablespoons mayonnaise (can be replaced with Greek yogurt or sour cream)
Chives (can be replaced with spring onion or parsley)
1/4 lemon
Salt
Black pepper

Looks delicious! Helpful hint to avoid getting lemon seeds in bowl, squeeze lemon with skin pointing towards bowl. This will keep the seeds in the lemon peel. 🍋
