I recently started selling freeze cups at work just to help the guys with the 110 degree days. I sell about 50, 9 oz cups per day @$1 a cup. No ice needed, nothing to make on the spot. Cost me .19 a cup to make. 🤷🏻♂️

Hi! A few of questions. 1. How many block of ice do you go through on a busy day? 3. How many bottles of syrup do you go through on a busy day with your most popular flavors? 2. How often do your machines need repair?

Depends on busy day. A normal busy day I go through 30-50 blocks. When it’s our town festival I can go through 150-200 blocks. I’d say normal day to day business we mix 10-20 quarts. With the Fujimarca shaver the only maintenance is changing the blade and greasing it.

Do you use molds to create your ice blocks? I am about to venture into this business after my honeymoon in hawaii. I fell in love with the place and couldn’t get enough shave ice. Keep the content coming and i’m hitting that subscribe button!

How do you temper or sweat your blocks of ice and then where do you store them once tempered? Have you changed much of your tempering process over the years?

In the summer we try to have 4 blocks out tempering on the counter at a time. They need to thaw/temper for 15-30 minutes so they shave better. As we use a block we pull another out. The busier it’s gets the more blocks we pull out at a time. Sometimes we forget to pull them out and have to thaw them under warm water and it slows us down a lot.

If you do events, do you have to purchase a permit per event?

I noticed you like the fujimarca. I do too. But I'm concerned about them not being nsf certified. How do you handle that?
I get it that you already have a business n probably have insurance in place for that but did you have to add anything to existing insurance? Buy a different policy? I can't imagine what can go wrong with a shaved ice setup but I'm sure someone somewhere has made it so insurance is needed. Do you even have insurance? This is a cost I can't estimate. What's your experience?
Where do you by your flavors ? I keep hearing about southern snow or snow wizard ?

How big of town (population) do you operate in?

I am thinking about starting a shave ice business, my question is . Do you have to have a food license? And when you do an event with a tent. And what about the health inspector?

how would you sell the shaved ice in a festival setting? how would you bring the amount of ice you need to accomplish serving the shaved ice to all the customers?

Freeze ice for 3 days or more. Once ice is solid put ice in yeti coolers(if you have one. Wrap ice in foil or separate layers with heat /cool insulation.
How many flavors did you start out with? Do you use glass bottles or plastic?

I think we started out with 40. We have added and gotten rid of flavors a few times. We now have 60 flavors.

We use plastic. I would use glass if I was doing all the pouring. With employees plastic is best.

I’m not sure I didn’t get a loan. I would start small and try to pay as you go. For equipment and such I’ve heard of people getting a 0% credit card and paying it off before interest is charged.

That’s a great question. I’m new to this. I’m purchasing a food trailer because I’ll be serving food as well. The area I’m hoping to be stationed will be next door to a high school. Near a boulevard. It’ll be a busy area.
How long does the syrup last up on the shelf once its all ready mixed with the simple syrup.
