I've been doing this exact rebuild with Leipzig and used players like Szoboszlai, Kerkez, Orban, Szalai and Gulasci. All of the youth prospects have the name Varga though.

I do these rebuilds this way: I throw away all star players and keep only youngsters and club grown players. I put the team to League Two and I am not allowed to do any signings, just the players from academy. Once I get back to PL, i can do like 2 or 3 signings each season. It is only possible with big teams, who have a lot of youngsters like both Manchesters, Liverpool, Arsenal, Chelsea. Or Real and Barcelona. I will try it With Bayern or Dortmund using players from Dortmund 2.
