When modeling using blockbench, remember that the limbs of an entity will rotate around the pivot point of the segment (which you can move around in the edit tab). This is important because if you pick the wrong pivot point, the animation will break (like your cows).

The cows' legs issue might have been because the pivot points weren't where the legs meet the body.
