I Made The Greatest Burgers Of All Time

These are some of my favourite burgers to cook and eat. They are seemingly simple, yet they are full of little details and specifics that push them way above anything I've ever bought in any place. No matter burger joint or fancy restaurant. It all starts with the best bun in the world, which I spent a ton of flour and time on developing. They can all be made in mini versions, and as a matter of fact I've sold and continue to sell a behemoth amount of them to this day. Anyway, Here's how it's done. Now go enjoy them or get rich selling them.

400g cucumber
20g salt (to salt cucumbers to remove water)

- 3 pounds (1.36 kg) crisp cucumbers , sliced 1/4-inch thick 500g
- 1/2 medium (0.5) onion , thinly sliced 100g
- 1/4 cup (75 g) kosher salt or sea salt 25g
- 2 cups (480 ml) white vinegar 160g
- 1/2 cup (120 ml) water 50g
- 1 cup (200 g) sugar 75g
- 2 Tablespoons (30 ml) mustard seeds 16
- 1 tbsp chilli flakes 5g
- 1 teaspoon (5 ml) turmeric 1g

1 Tablespoon baking powder 8g
1½ teaspoon salt 8g
1½ teaspoon garlic powder 4g
1½ teaspoon smoked paprika 4g
1½ teaspoon dried thyme 2g
1½ teaspoon onion powder 4g
1 teaspoon cayenne pepper 1g

    ~mentally replaces the neurotoxin with an umami (sp) dehydrated veggie blend of celery, carrot, yam, tomato and cabbage powders. the white Asian yam, not the orange sweet potato that's called a yam in the US. I'm going to need a bathtub full of that bacon chutney.

    man i love your channel but i gotta give you the american perspective on this. 30% fat chuck, yes. coarsely ground while half-frozen, yes. but 80 grams cuz it's going to be smashed on a screaming hot cast iron skillet at sustained high heat, and larger patties will not give you that exquisite high ratio of maillard crust to meat. i want 30% fat, and 70% maillard crust. you want more meat? make more burgers. salt and pepper heavily on both sides and let the patties sit open in the fridge a couple hours and maybe even 24. heat up your ridiculously large and heavy cast iron skillet throw in butter and a whole sliced onion, go ahead and worry about the butter burning if you like worrying, then put in your patties, and smash them violently against the hot cast iron and hold them there until they totally submit. skip the complicated socialist condiment, no ketchup, no mustard, and for god's sake no mayo unless you're making a BLT, just the fat&butter-soaked onions and two or three slices of dill pickle on a very compliant toasted bun. and the burger looked at me and my heart was beating like mad and yes i said i will yes
