I can understand it being "For the views" but dangit, I wish I had the money to do the same type of thing. Except without the added extras. I just want a wellington that doesn't cost me $100+
If you are going to attempt something like this again, you must understand you absolutely HAVE to cook the poultry and fish beforehand. The problem you are having is the lack of synergy between the protiens. With that you need to choose beforehand which juices you want to harmonize and limit the dissonant flavors (by cooking them beforehand) so you come up with a symphony at the end.

@@scottstewart3884 maybe not. The point of my suggestion of cooking certain meats is to remove juices from them. When you put a mass with less native juice into one with more, the cooking process will naturally move the juices from the dominate source into the one with less juice. Thereby controlling the flavor by making fish and chicken less fishy/chicken-y and more beefy.

I love that you are willing to experiment, and upload the failures. I have a huge amount of respect for that.
Babish's every meat burrito video taught me years ago this was doomed.

Your turkey disaster turned miracle from a few years back inspired me to make a TurBacLoin. I've now made it for Christmas every year since. Thawed Butterball roll, pounded flat as you did, layer bacon and put a pork tenderloin in the middle rolled up. Try it Guga, it's amazing. Having seen this one, I might just try Wellingtoning it tomorrow. Thanks!

I visited several of Gordon’s restaurants; mostly because it’s the only show host my wife and I watch together. I can tell you first hand, he made the best burger I’ve ever ate, in his restaurant at Planet Hollywood in Los Vegas. The French fries were an attempt at being elevated but just turned out weird. His other restaurants and food was just okay. The man can have one hell of a burger made, in my opinion.

Ohhh im a home cook but i think you just gave me a great idea... there is a very popular full-of-meat dish among the portuguese, made mostly in the north of the country, called Francesinha (it is the portuguese spin on Croque Madame). I have never seen it presented as wellington but all the elements are there!
So today Christmas day I Sous Vide A 8lb Prime Rib it was one of the Best I have every had, Thank You Guga !!!

The stench is the fish and octopus. They also emit moisture that soaks everything, especially the beef jerky, and then the puff pastry soaks up all the combined juices that could have come from a sweaty sock.

A flat meat all offal/all choice beef wellington, offal/choice fajitas, or lengua tacos. Extra points if you said some head cheese was added to each variation. All beef leave nothing unused.
