    That’s a channel catfish. Three catfish species are blue, flathead and channel. Channel are the stock fish. Bullhead (yellow and black) get about 1-3 pounds. A 12 pound is a freakin radioactive mutant. Blues and flathead get over a hundred pounds.

    That dude knew just enough to be dangerous and spread bad info. Looks most like a blue cat though. Not any spots that I could see that are prevalent in stocked channel catfish. Definitely didn't look too close to 12 lbs. either

    i love fishing the most out of all the outdoor/hunting sports cus u get those moments like 12:26 where you can just talk to another fisherman so easily. it just feels so pure and wholesome, like the spirit of the fish themselves brings us together lol

    We would have catfish fries, in the backyard, about 2 or 3 times a month when I was growing up. My mom would bring out the burner and the biggest cast iron skillet she had. We'd eat them about as fast as she could pull them out of the oil.

    I grew up skinning and fileting catfish here in southern Louisiana and I gotta say it was very entertaining watching you learn to filet it! Haha. We usually have a nail in a tree or on a post, cut a u shape in the skin by the head, pull the skin off, filet the meat off, then toss the whole thing out! You need a damn hatchet to cut the head off and they're so slimy that you can't hold onto them well without the head! Also we have a log of bodies of water with high mercury levels here, just gotta follow the regulations on how much to eat and don't eat the fish skin, it contains the majority of the mercury just like vegetables Great video as always!

    I've caught quite a few catfish in my day. That one was about a 4 pounder I'd say. Definitely not 12 pounds as that guy suggested. And it was a channel catfish, not a bullhead.

    Love this! In Alabama, we gut the catfish, cut slightly into the skin around entire head, nail the catfish to a tree at the head, peel the skin off entire fish with pliers except head, and then fillet it with the fish sitting on the belly. The head staying on until after you fillet it gives it balance. I take the head off last basically the same way as you. Idk if it's the best way but has worked for me for 45 years or so. Catfish is a staple in Alabama. Just an idea.

    Thanks for your video. Catfish and bullheads (same family) have no pin bones but a thick ribcage. When I was a kid growing up in the late 1950's to early 1960's in Connecticut we would fish for catfish and bullheads. They were considered back then poor peoples fish has usually people, like us, of lower economics means would fish for them. They are delicious. Catfish and bullhead are no longer considered trash fish, as people now realize that they are delicious.

    I believe that yellow flesh was the fat. Toss the filet in an ice bath to firm it up and gets the blood out, then you can easily trim the fat off. The fish will taste much cleaner without all the yellow fat.

    Awesome video Taku. Your drone shots is epic. That catfish you caught is a channel catfish. Here in the mid-west we have lots of those. But the prize catfish here is the blue catfish and the flathead catfish. My grandkids prefer the catfish nuggets instead of the chicken Mcnuggets lol.     Awesome videos bro. According to a marine biologist, fish will have discoloration in the fat to be either yellow or green due to the chemicals in the waterways. Recommend not to eat the discolored meat. Just too bad all our waterways are contaminated otherwise all the fish would taste so much better. Excellent recipes on catch and cook. 🤙🏼

    sorry to burst your bubble, catfish are not sought after by half the country. but please, speak about every "fresh water person" example, in my area, the catfish are undersized garbage fish and effort is typically spent on targeting trout, steelhead, salmon, and bass

    Reminds me of when I was like 5 years old going catfishing with my dad. We would come home and deep fry them as well, they were so good that memory is embedded in my brain to this day(and I don't think it's going anywhere!). I'm going to have to do a lot more catfishing this summer and this time hopefully make some great memories with my daughter! And wife 😂 Thanks for the great content!

    LOL Love watching people clean a catfish for the first time. We catch and clean well over 1000 each summer so ya were pretty good at it. That cat would of gotten done in 8 min. Try shore lunch beer batter next time and deep fry them nuggets. You will love the hell out of it. Thanks for sharing your experience!

    I've always left head on and guts in. Helps keep the fish somewhat less awkward on it's side. Feel behind the pectoral fins for a bone that points towards the tail and start your fillet there. Cut from the belly all the way through the skin on the back in one clean cut from there all the way to the tail, but leave the skin at the back by the tail. Then skin that fillet. Leaving the skin attached gives you the whole body of the fish to grab and provides better grip while you're trying to remove the skin. There are obviously hundreds of ways to do it, but that's just the way that has always worked best for me. G Great content and the food looks amazing!

    In order to avoid haot spots when cooking with a Dutch oven, rotate the lid about every 10 minutes 90 degrees to move any hot spots around the tope of the food. Next get a raising device called a trivet . It raises the oven above the coals to allow more even cooking temperature. When cooking rotated the oven 90 degrees one way then move the lid 90 degrees the other way, voila, even cooking.

    Catfish is one of my favorite fish growing up. It's so creamy and delicate when you cook it right. There's a Vietnamese dish where it's cooked in a caramel sauce in a hot stone pot. Sooo good.

    I’m from East Tennessee so I’ve eaten a lot of fried catfish and I’ve never cooked em myself but I’ve seen a lot of em cleaned it was kinda cool seeing you gut it because we don’t gut em. We take a nail and hang the fish hole right under its Ching by the nail right under the pectoral fins you slice the skin then use pliers to peel it off all at once like a sock then cut your filets out.

    Down in south Texas, we go fishing for our freshwater catfish… once we have our catch, we clean them, chop them into one inch size nuggets skin and all… we use cornmeal, seasoning, flour and a lite batter… & into the frying pan they go! Delicious with some lemon and some corn tortillas… Thx Dad for showing me how to catch, cook and enjoy them delicious catfish!!!

    Taku! You should check-out some catfish breakdown videos. Most I've seen hang the catfish up, don't even gut it, score around skin and rip the skin off, and then slice the fillets off while hanging. A pretty cool and different process. No need to bother with gutting and taking the head off and gets rid of the skin with minimal waste.

    Beautiful Clear Lake. Not sure about eating those fish though 🤔. Clear Lake was next to Many Mercury Mines and just next to you is a EPA Super Fund Site and the Mercury Water is leaking through a Earthen Dam. Great Fishing, but they are Contaminated with high levels of the metal Mercury.

    That yellow on the fish’s back is a fat line more prevelant in larger fish. I usually trim that off the yellow fat line because it’s usually off tasting. The catfish is either a blue or a stocked channel catfish. Both are great eating, enjoy.

    Fish fries are a staple here in the South, nothing can compare to fried catfish & fries. Tilapia is trying to take over, but in my opinion its not as flavorful as catfish. I generally use a Cajun batter, Louisiana fish fry or Zatarains, which only requires batter & water. But my personal favorite preference for catfish is blackened. Seasoning a filet heavily then frying in butter. Omg, its superb!!!!

    as a long time catfisher.... the brown/red that is under the skin - you gotta cut it out - it's the fat. That's where the off taste comes from

    That is a Channel catfish. Bullhead look similar but usually are smaller and you catch them often crappie fishing up north. Catfish store a lot of the “bad” meat in the stomach so just stick to the side fillets and you’re good!

    You should consider a gear series where you talk about all the kit you use. Things like kayak, reels, rods, baits, cooking utensils, camera gear and im sure much more. People who get to live and fish as much as you do surely have some insights that most of us don't, I know id love a series where you explain the why on you gear rather then just a shout out too it!     PB here in this area was a 28 pound channel cat largest black crappie probably around 13 inches. We used to go fish that campground in high school even, unfortunately the lake is so low now its hard to find a place to launch a boat which also kills all the bank fishing spots. I know a spot up north a few hours from the campground you should check out. Free camping on the beach and saltwater goodies, best part is you can drive down to and along the beach as far as you feel comfortable.

    I'm glad you had a chance to sample some delicious fried catfish. May I suggest you try it southern style? Dredge catfish chunks in simple corn meal seasoned with salt and black pepper. Serve with cornbread and fried greens drizzled with a little pickled hot pepper vinegar. This goes wonderfully with an IPA.
