When they min click raise the turn it’s to stop your plan of going big twice, essentially it’s buying a showdown, a flush at those limits just hopes you have a 10 and blasts it.

Spot on. His read of turn min raises esp. when flop checks through is way off compared to how the pool is playing right now. There's plenty of people promoting the min raise strategy with lots that ain't the nuts.

it's a lot to take in

The issue is that you're playing all wrong against this population. You're trying to play good poker against bad players instead of playing exploitative poker vs a population of people who are vulnerable to it. This means they're more sticky and will tend to call things down with weak hands, that and min clicking back at them is pretty strong too
