(Italian here too) the biggest problem I saw was how dry it was Panettone is a bit dry but this was just bread with dried fruit, panettone is fluffy and moist. I am not a baker so I don't know exactly what he did wrong, but this definitely is not panettone

As someone who has made them professionally in a professional bakery I can confirm that this is miles away from panettone. You did about every step wrong while making this. Let’s ignore the pronounciation and start with the yeast. You should ferment your dough with a lievito madre, a stiff sourdough starter. The lower pH gives it amazing keeping qualities and the flavour is much deeper. Secondly the order of mixing the ingredients is wrong. You should start with making a basic dough, then add the butter and eggyolks. Is you add all your liquids first and last the flour, the dough is too wet and you can never build sufficient gluten. Then you should ferment the dough till tripled in size and then add more flour, sugar, butter, yolks, honey, fruit and water. Traditionally you put candied orange and lemon cubes in, a panettone with only raisins is not a thing. Also your final dough is way too dry. As a result it didn’t rise enough, due to lack of gluten structure and yeast power. The final product is something that is way too dense, dry and off in flavour to be called a panettone, but you said it yourself, you have made fruitcake. And you’re right, baking is very easy if you make something and come up with a recipe that cuts more than half the time, ingredients and nescesary steps and still call it a panettone🤦 try again without making just a cake and mixing raisins through, try making the real thing because for this you didn’t have to buy the paper milds at all, just use a cake tin

He seems like the type of person to walk into a professional kitchen/bakery and leave 20 minutes later crying his ass off. Making/baking food is not necessarily the hard part. The hard part is prepping for hundreds of recipes, setting all the equipment up, making everything next to perfect and all the same, and then cleaning up. Baking by itself is fun, baking professionally sucks. There is a reason I quit the bakery I used to work at. I didn’t want to wake up at 1am, work my ass off, be stressed constantly, then go home and sleep the day away.
