[Todays Recipe👨🏻‍🍳]
1. Rinse 800g of chicken in cold water.
2. Boil the chicken in water with a pinch of salt and a splash of rice wine, then rinse it in cold water.
3. In a heated pot, fry 6 anchovies briefly, then add 50g radish, ½ soaked shiitake mushroom, 30g onion, 1 sheet of kelp, 6 cups of water, 20g green onion, and a few Korean hot peppers. Boil to make the broth.
4. Strain the broth to remove the solids.
5. Mix 1 tbsp soy sauce, 2 tbsp rice wine, ½ tbsp minced garlic, a dash of ginger juice, and a sprinkle of white pepper to make the marinade.
6. Marinate the chicken in this mixture.
7. Combine 8 tbsp soy sauce, 1 cup of the broth, 2 tbsp sugar, ½ tbsp ground black pepper, 2 tbsp cooking wine, 1 tbsp corn syrup, 1 tbsp plum extract, 2 tbsp minced garlic, and ¼ tbsp minced ginger to create the seasoning.
8. In a pot, add the seasoning mixture, 2 Korean hot peppers, 3 cups of the broth, and the marinated chicken, then bring to a boil.
9. Cut the carrot into bite-sized pieces and round off the edges; cut the onion into suitable sizes after trimming the ends.
10. Cut the green bell pepper and red bell pepper into bite-sized pieces.
11. When the broth starts to boil, add the potatoes, carrots, and onions.
12. In a hot pan, sauté the onion ends with some broth.
13. Add the green and red bell peppers to the pot, strain the sautéed onions into it, and continue to boil.
14. Add the soaked glass noodles and bring to a boil once more.
15. Sprinkle with sesame seeds before serving.
