    Nice! I've used Incognito only once so far but the beer was (is) excellent. I emailed Yakima Valley and they said the best way to use it was in whirlpool but what I did was, at knockout, took a few liters out at about 200 degrees and added the Incognito with some Citra pellet hops (they suggested the hops will suck up some of the oil and make things not as sticky) and let it sit there while I chilled the kettle then I simply added it to the fermenter. Simple and it worked.

    Love the two kettle idea. Might take inspiration from that when I start using my propane system again in the spring. Also, plan to brew with some incognito in my next brew. Stoked to give that gooey hop goodness a try. Cool to hear someone else doing dry hop in a clear beer style during high krausen for that extra hop kick. Everything I read online tries to say if you dry hop during high krausen you're going to end up with a hazy beer! Well, if it tastes good then whatever. Anyway, love the system, love the video, love the beer! Cheers!🍻

    Any chance you can comment briefly on your water chemistry? I’m a rookie and the beers I’ve brewed have this weird taste that I think the tap water is introducing. I’m mainly looking for “why use beer salts with distilled water” (you’re using beer salts, right?) and how much you use. I know my mileage will vary. Just hoping you can potentially point me in a direction. Thx

  • @ElementaryBrewingCo

    @ElementaryBrewingCo

    Жыл бұрын

    Water is a great place to start looking when you have that “weird” taste. I use distilled water because it’s a blank slate. RO water is basically the same but doesn’t get quite as blank. I always add calcium chloride, magnesium (in the form of Epsom salt), and gypsum. I have found that for my taste I prefer a balanced profile, adding more equal amounts of each. I will also add 88% lactic acid to lighter beers to bring my mash ph down a bit. I highly recommend using Brewfather for your water additions! It’s pretty simple to get started. And I would absolutely brew a batch with RO or distilled to see if that taste goes away!
