Welcome to the Lone Star Grillz family, Dash. I was sure it was an LSG… but you did surprise me with it being a pellet smoker! I’m very excited for you, and look forward to seeing how that baby performs. Maybe you can highlight the construction quality. You really can’t talk Lone Star Grillz without featuring their beautiful welds. I did add extra probe ports to mine. If you are interested, I can show you how I did it. Again… CONGRATS!

Thank you Sir. So far no one saw the it being a pellet cooker coming and I like that! I may have to look into adding extra probe ports. I just found out that the upper portion of the cooker has a brace in it that won't allow the probes to be routed over the 2nd rack. That might be the first mod!
Looking forward to seeing this one. This should be one heck of an investment to the catering business. Congrats man.

Thank you, Sir. I am already working on a chimney to get the exhaust up and out of the garage, similar to what I use with the other cookers.

Welp, that's something I will have to try out to see how it works. But I can tell you that it held pretty close to 200 for 8 hours while I was curing the paint. It fluctuated at most 15 low and under 10 high from 200 over the course of 8 hours. I was very impressed, to say the least.

The extra price for this is going to come in with the additional cooking space and the controller, IMHO. So far I'd say worth it.

Well seeing as how I usually cook to order I'd need to have a large order of ribs before I can see how many racks it can hold. But hang tight and stay tuned seems almost anything is possible!

There are so many advantages to using a pellet cooker. Also I do not cook for my business on offsets. I use reverse flow smokers.

@@SDSBBQs I know that you know the offset is traditional. Reverse flow is a technique. What do you feel that you gain by opting to refrain from the “tried and true method”. Good bbq is good bbq. No matter how you do it. Hopefully. Your next video could show what advantages you perceive to get with this method.

Sigh... reverse flow is not a technique. The smoker has baffling built in to reverse the flow of the heat and smoke. Liken it to an Automatic vs a Manual car they both will bet you from a to be but the difference is in the guts of the transmission. Same with a reverse flow, internally it is different. If you'd like me to post a link for more info please let me know. Or just do a simple search for Offset vs reverse flow and you'll find all the info. What I feel I will gain from not using a "tried and true method" is convenience. I am always up for a challenge and and cooking with a wood burning smoker is just that. BUT, the ability to save time and energy when I am cooking to make a profit trumps my need to keep things tried and true. Different strokes for different folks, my man. I am taking this opportunity to try something new and be a trendsetter with this big cabinet to help others who may come along and only have pellets as an option. Not everywhere can people cook with open fire or wood burning cookers. Until you have tried and used a pellet smoker I'd ask you to not pass judgement. Don't yuck my yum when you haven't even tried it.

@@SDSBBQs Sorry if I was being negative. Everybody has their preference. Some people do not like meat or seasoning. Everybody taste buds are different and will change. You might turn out the best BBQ this side of the Dixie. I was wondering. Why make the change? Using your simile. We all know nothing is cut and dry as both get you from point A - point B as adults. They will have two different outcomes. A t- shirt made of cotton is not a t-shirt made of wool. A cheap car is not a sports car. One business that does the same thing will not be like another business doing the same thing. Skills trumps all. The wrong tool in the right persons hand will alway be better than the right tool in the wrong persons hand. ( that’s original)

*Passes you a beer* I like this and I like you. I like the way you think, you're right it's not as easily said as going from A to B but I was trying to simplify it. So in a nutshell the convenience of the pellet cooker and capacity were the main factors, in the change. I still have the wood burning smokers for when I absolutely have to have a wood fired cook, and need more capacity than my Vertical Charcoal/wood burning smoker or this new Pellet Cabinet can provide. Another reason that I haven't mentioned as of late is that my wood burning smoker is rusted out and on it's last leg. This video is 3 years old now and the smoker is holding on by a wish and a prayer. kzread.info/dash/bejne/f4OHlbOdqd3amM4.html I have used that cooker a handful of times in 3 years because of the extra attention needed to use that cooker at the present time. When I was given my pellet smoker by my wife for Christmas years ago I swore I'd never use it for customer cooks. But in time I grew to trust it and how I needed to cook with it for customers and once I saw how easy the cooks were I was hooked. I've lost a LOT of sleep doing BBQ over the years and I'm over loosing sleep if I don't have to. Pellets are also cheaper which would help to increase my profits. Lastly, it would take a very discerning palate to be able to tell the difference, real talk.
I bought meat hooks off of Amazon and use the meat rods to hang ribs and ham
