    This review is spot on… we drove to check it out. My pregnant wife (at the time) was NOT easy to convince or impress. So this was a huge gamble for me pushing this. It delivered.     I’m currently here in Rome, Italy with some of the best Italian food in the world but nothing makes my mouth water more than staring at that giant beef rib. The patience these guys have. I’d be attacking that thing first. That, the brisket look damn good. Really everything does, it’s clear to see why Goldee’s is the current reigning BBQ top dog. Yum.

    Went to Goldees back in June and it was phenomenal! Loved every bite! The beef rib was so rich and tender! Brisket was juicy and flavorful and sides were next level. I also truly enjoyed their bread pudding for dessert. If you love BBQ, Goldees has to be on your bucket list!

    Pork butt always a good one to start with! In my experience it’s hard to get too wrong, if you hit the magic temp, just comes down to rubs, sauces, how it’s served etc…unlike brisket etc which is so variable! How did it turn out?

    I've been to Goldee's three times now. If anything it only gets better. The barbecue is absolutely redefining. I've had Franklin. I've had Snow's. Nothing even comes close to Goldee's. These guys execute everything with perfection. It's like they took the Texas barbecue formula and just perfected it.

    That's exactly what they did they used what they learned and built on it. If it weren't for Franklin I don't think Goldee's would exist actually a lot of new spots probably wouldn't which is great. Most old school BBQ spots never really had good sides and now that's a thing.

    Jeremy taught me how to make brisket, I was so inspired I left California and moved to Central Texas to see what Brisket is supposed to taste like. Now my search for an offset smoker that my wife wont kill me for buying begins. Thank you Jeremy.

    check into workhorse pits. They've been acclaimed my many, including Jeremy to be terrific cookers. And I think the price to value is pretty amazing, and shipping is reasonable as well.

    The chargriller grand champ is the best option I’ve found and works wonders (in terms of price and functionality). You even get decent heat distribution flipping over the tray inside the cooking chamber (bottom, drill some holes)

    The day I was there the turkey and sausage was the best thing on my plate.The brisket only tasted like the rub and the ribs were chewy and dry.I’m sure every bbq place has a not so good cook on a piece or two when mass cooking but have had much better brisket and ribs than I got that day.The banana pudding reminded me of my grandma’s it was great.

    Just a suggestion for a future video(s). You could review the packages of pre prepared ribs from grocery stores that just need to be cooked is all. I’d be curious to find out if they are any good?!?

    I found out Last Minute you were there. Im 6 hours away and almost pulled an all nighter to make the drive. I have been telling my wife everyday why didn't i go?     One of my favorite parts of this video is I don’t see any sauce sitting on the table with you guys. More and more when I go to a barbecue joint, I want to try the meat as it was cooked and smoked without any addition of sauce. Everything looks amazing on that tray! I’ve never seen hash that color before but it looks tasty.

    Oh dang! Goldees is the best. Hurtado in Arlington is another great bbq spot. Try the local "hazy cat" IPA (panther island brewing) it was a great pairing lol.

    The best bbq in the world is very personal. I subscribe to Chudds and Jeremy’s channel. Don’t have room for a big offfset smoker so I follow Bradley’s Webber series combined with Jeremy’s S&P method with a wrap of Waygu, perfection.

    My wife was just down that way and I got her to go to Terry Blacks when she was in Dallas and tried to get her to go to Goldees when she was in FW. I wasn’t able to go with her this year cause of work…she lived TB, didn’t make it to Goldee

    You should do a video on Cattleack BBQ. I would put Cattleack and Goldee's as my top 2 in the Dallas / Fort Worth area. In fact, Cattleack's sausage might be my favorite.

    Have you made it down to the Burnt Bean (Seguin, TX)? It’s the best I’ve had in Texas. I haven’t yet made it up to Dallas for Goldees. But everything at the Burnt Bean is incredible, EVERYTHING.

    I was at Goldies 2 weeks ago. I really wasn't as impressed with the Brisket as I thought I would be. The ribs were next level. Don't know how they got them so juicy. The grits also tasted much better cold later that day than fresh.

    So do they cook the brisket super low before they wrap to get the fat render down to the point you at pointing out in the video? I do hate the fat that is not rendered enough on a brisket. Any info would be great.

I've seen sous vide rests, but I wonder if having that initial smoke in an offset and "wrapping" in a sous vide bag to bring it up to temp AND then resting in that water bath, might have interesting results. Especially when using cheaper, leaner brisket.

    Been there, done that. Cooked my first brisket (Costco prime 16-lb before trim) using none other than Jeremy's guidelines and foil boat. Our oven would not get below 185F for the 10+ hour rest I was facing. So, in a bag it went and in a 155F bath. Taste and tenderness were superb. Did lose the bark bite as if softened up in the sealed bag, but all we could say was "Wow! Thanks Jeremy!"

    The most surprising thing was Jeremy never hearing of a Texas Twinkie before. Fully expect to see that video soon on the channel. All of that food looked amazing. That one guy loses points for buying Springsteen tickets…..

I am totally on hold waiting for your review of a brisket on that Camp Chef Apex 36” I would like to have that integrated gas grill and pellet smoker combination but I seriously value your opinion and I am looking forward to your review on it.
