I love watching your Italy food vlogs - and all the traveling up and down the country you do. It's so pure and real. I live in Chicago (USA) but have spent a lot of time in Italy, but miss it so much. Your channel does an incredible job honoring the culture of what makes Italy so special. What was the base of the sauce for "Surprise Surprise?" It looks cheesy but was something added to make it a bit less viscous?

It is Parmigiano cream. You make it with cheese and pasta water.
