Hyderbadi Kachi Style Biriyani | Shabosphere

Hyderbadi Chicken Kachi Dum Biriyani .

For chicken Marination
Chicken -1 .5 kg biriyani cut
Yogurt -1.5 cup ( thick yogurt)
Onion - 6 nos fried to crispy ( keep aside little for dumm)
Mint and coriander-1 bunch each chopped ( keep aside little for dumm )
Green chilly -6 nos
Ginger garlic paste -1 tbs
Spice Mix
Kashmiri red chilly powder- 1 tbs
Coriander powder - 1/2 tbs
Turmeric-1 tsp
Cumin powder - 1 tsp
Garam masala -1.5 tsp
Lemon juice - 4 tbs
Ghee -2 tbs
Salt
For Rice
Basmathi Rice -1 kg washed and soaked for 20 min
Raw spice
Cardamom-5 nos
Cinnamon-2 sticks
Bay leaf -2 nos
Clove -4 nos
Cumin seeds- 1 tsp
Ghee - 4 tbs
Saffron milk -1/2 cup
Lemon juice - 1/2 cup
Oil - to fry and smoke
Charcoal - 2 nos to smoke ( or coconut shell )
Flour dough and Tawa - for dum
Onion - fried for dum
Coriander and mint leaves chopped - for dumm
Cashew and raisins- fried for dumm
Water to cook rice .
#method
First step is to marinate the chicken , to chicken add in all the ingredients - keep aside for 2-3 hrs or else over night is the best .
To cook rice , pour in water and add the raw spices , lemon juice and salt and when the water starts to warm up add in the washed rice . And cook the rice till 3/4 cooked . Drain the water and keep rice aside .
For dumm you could either use an aluminum foil or can seal the lid with flour dough .
To a wide pan add in ghee ( also can add in the onion fried oil ) add in the marinated chicken and cook the chicken for 10 minutes. Switch off the flame and add in the rice , fried onions , nuts , mint and coriander leaves , saffron milk and ghee . Close and seal the lid with dough. Keep a tawa ( any Pan ) over the flame and then the biriyani pot . And let’s put for Dumm for 40 min . Open the dum let’s smoke the rice , to a bowl add in the burning charcoal and pour oil for the smoke to come immediately close with lid and close for 5 min - don’t allow the smoke to escape .Then remove and mix the masala with rice and serve. .
