As a pastry chef from Hungary I have to say it's a nice cake but it's not exactly Eszterházy. Originally it would be six layers with walnut or walnut and almond mix and the cream is a yolk rich pastry cream with addition of orange and lemon zest, orange liquor that is whipped up with butter to be light and fluffy. Layers of cream and dacquiose should be same thickness and the cake is finished with a top glaze of white fondant glaze (not sugarpaste/rolled fondant) and lines are chocolate. :) Still good effort and nice cake! :)

I'm Hungarian, my mother would make something similar to this. My brother loved it, it would just melt in your mouth. I will certainly try this one for sure.

Thank you Andrej, the price for hazelnuts in my country is simply crazy! Using a mixture of walnuts and ground almonds will definitely make this cake more affordable.

I'm from Hungary, it's not the traditional Eszterházy cake. BUT I think it's better! The original is really dense, and contains a lot of sugar with butter. I don’t like it, that is so sugary... So I made this one, and it's amazing!! 😍 🙏🏼 Thanks for the recipe! 😚

Thank you for sharing the recipe. I have a question that I hope you can answer (or perhaps one of the people who baked this can respond). Typically hazelnut dacquoise is just merengue with folded hazelnuts that is baked at low temperature for several hours until it comes out perfectly dry and crisp. What you're making is only baked for 15 minutes and comes out soft. What sort of texture is it supposed to have? cake-like, such as sponge layers? or is it supposed to be on the dry side? I'm just confused about baking what looks like a merengue (with all those egg whites) for just 15 minutes. I'm afraid it'll come out chewy.
Looks amazing! since the dacquoise batter looks quite thick, can I pipe them directly onto a parchment paper without a tin? I only have one tin and I’m worried that the batter would deflate during the wait if I baked one layer at a time 🙁

Thank you for sharing this wonderful recipe. I made it and it was delicious! The only problem was the glaze! Could you please tell me why it kept curdling? I did let the melted butter cool down. I must have tried 4 times with no results 🤣. In the end i used white chocolate and dark chocolate ganache! 🤦🏼♀️

I'm curious how was it baking hazelnut dacquoise. Normally hazelnut dacquoise is baked for many hours until it comes out very dry/brittle. How was this one? I'm afraid it'll be chewy if baked only for 15 minutes.
Please, can you give us exact measures of each ingredient ?

My custard didn't thicken as much as yours what shall I do
I made it yesterday, taste wise it was amazing but the measurements and baking time have something wrong with it because the chocolate pastry cream was runny not thic as yours and it took 30 min in the oven. And I was following the instructions to the letter.🙁
Can i ask... does it taste eggy at all .cos 9 egg yolks seems like a lot

Slightly, yes. But not the same eggy taste as a boiled or fried egg. It’s a rich dessert flavor.
I believe it’s pronounced like “duck was”? Unless the “s” is silent
