    As far as I know, Lionsteel responded to criticism some time ago that the hardening was too soft and has significantly improved its hardening. For example, I own a Myto Special Edition in K390 and Molletta states that the hardness is 64 hrc. It's just that there are still a lot of older Lionsteel knives in circulation and the hardening is rather lower, but the hardening should be significantly better in newer versions or models.

    I've watched a video (not one of yours) about a test on various knives with a hard steel (I don't remember if it was 3v but anyway a hard steel) and what irritated me was that when they discovered an italian made knife with soft steel they harshly criticized it but when they discovered the same thing about a knife made in the USA by a well known brand their take was "it's impossible they made a mistake they did it on purpose to make easier to sharpen it mantaining the other benefits of the steel". some people are biased.

    The "older" Lionsteel magnacut knives were 61-62.5HRC and the newer ones should be around 63HRC from the ones I spoke to. Lionsteel uses a third party heat treating company (Trattamenti Termici Todesco SAS), so they could use different protocols for different models. But I wish Lionsteel would list the range of every model, instead of listing an index with a range for the steel they use. I'm waiting on a titanium Skinny now, not a really bad price for an integral and I like the profile

    Regarding the economic rationale of running supersteels soft, my guess is that some companies run too-large batches and skip the cryo treatment. From Larrin's work it seems that some steels (like Magnacut) absolutely need cryo treatment to hit their recommended targets.

  • @CNYKnifeNut

    @CNYKnifeNut

    Ай бұрын

    The "toothy edge" thing is mostly a myth. If all you're doing is slicing cuts in fibrous material, low grit is gonna have better edge retention. In a mixed use/real world scenario though, I've never found much difference in edge retention between 320 and 1200 grit. I've even found higher grit finishes to strop back better, leaving a functional working edge for longer. I've tested the theory quite a bit with Elmax, 10v, S90V and asp60.

    I don't think its that hideous, but I also remember some horrors of cheap, anodised nastiness Anyway, thing with these higher end, high alloy steels is that they're fairly expensive, both in terms of the material and a little bit in terms of the heat treatment. However on a batch processing line its not really adding more per unit at a scale which is going to be wildly unprofitable either. So they may as well be super hard because most of them aren't hugely tough, they don't necessarily take an attractive finish and there's an expectation from the customer that if they're buying something like Magnacut or an M390 that it'll have some apex stability and wear resistance.
