My two cents from watching fish from my area is scratching hard two times count two seconds then repeat. That technique camouflages you as a parrot fish in a way eating the coral or rocks so it idicates most fish that the fish are feeding on that side. many times I've seen too many people use the scratch techniques like they're scratching themselves or scratching very eagerly (this is for anyone new to spearing) or wanna learn a new scratch technique Just remember peace with every breath my friends be safe dive safe. You gotta score the fish before you fry em! They'll cook and crisp up way betta!
You're right Ryan, high heat is needed for frying. Easiest way to keep the heat in the pot is to use more oil--deep frying! Takes forever to cool though, so not ideal if you're out in the sticks lol

If water is on the fish it’s going to fry mush if you dry off the water before fry it’s going to be crispy👍

Pat dry, deep fry at 350F with mixture of avocado and coconut oils. Use a thermometer made for that purpose.

Cornstarch on the mempachi then fry is probably the best way! It won’t be mushy with the cornstarch

Easier and faster to filet them, skin off, then cook in butter in an iron skillet a few minutes each side w Salt & pepper. Bomb!

Are you diving with a Mantra on one foot and a Prana on the other? Why? As far as the crispiness of the fish, you already do the right things by killing, bleeding, and keeping them in saltwater. Hotter oil is better. We also have a screened-in drying rack that we can hang up anywhere. It's a way to keep the fish from sitting in slime without flies getting all over them.
If you want crunchy skin I would heat the oil to about 380-385

Small thin fish should be fried at 350 degrees and you larger thicker fish at 360 degrees. You will need to watch the flame to try and keep the heat of the oil consistent.
You deep frying them, that needs at least 180°C and steady heat. Personally i use or tempura butter or flour them with a mix of regular flour,corn starch, corn flour and semolina! anyway you need lot of heat!!
