No, that thermometer and vent are DEFINITELY positioned wrong, especially for my 26.75 kettle.

He is correct. Weber designed like that for a reason. However, i wish Weber would add a second thermometer.

THANK YOU! This was by far the most comprehensive video on using the Weber Char Baskets I’ve seen. Next month marks the one year anniversary that I got my kettle and switched to charcoal. I have an SnS and a DnG. They work great but I personally prefer using my baskets. For some reason I feel more comfortable using them and I love that I have so many options and can even move them around when the coals are hot. I use every configuration you demonstrated (save for the second to last one you recommended) but it took me almost a year of sifting through hundreds of KZread videos to discover them! Having all of them succinctly demonstrated in one high quality video is fantastic! Thank you for taking the time to produce this video. Your content is extremely helpful for noobs like me!

Hello Ron. The parallel indirect method is great for ribs. You have to be sure that your starter coals are fully lit to be sure your fire does not go out. Thank you so much for taking the time to write a really nice comment. Take care.

I was fooled by buying a Slow N Sear bucket and I even changed my top grill, but seing this video, I understood how to use the Weber grills properly. Did an 8 hour controlled smoke, variable temp cook on a Boston butt a few weeks ago. Got rave reviews for a first time attempt with a kettle. I say first time because I have smoked meats before on dedicated smokers. It surprised and shocked a few guys who rely on electric wood pellet smokers with temp controls.

Good Stuff. I been practicing what your preacher for many years! I do like to 1st sear my thick steaks for 1-2 per side in a hot center, then move them to the outer ring with a thermometer in the center of the steaks and when it hits 100 degrees I flip it so the side that was closer to the center to the outside and then remove it between 125 & 130 degrees!

the sear marks on those wood chunks looked amazing. cooked to a perfect temperature and those wood ribs were perfect, but why no sauce?(or wood varnish) lol! This was very informative man. The baskets don't get as much love as they should, they are very useful. I like to use them a lot in last config you showed when they serve more as a divider...keeps the charcoal close together and compact.

Great video and great props! I just got got my Master Touch and I was wondering if it would be same using lump coal. I have an egg for my long smokes so I prefer to use lump coal, but if charcoal is better for the kettle, I will use it. Thanks for posting!

For me it is really just a personal preference. Lump works just fine in the kettle also.

I've found all you need is the baskets for all configurations ...gone are the days of putting charcoal directly on the bottom rack. I use the parallel setup for 1hour-2hour cooks and just dump in a full Weber chimney split between both baskets. I can regulate the heat down for slower cooks using the vents.

The baskets work great. I make a lot of videos using the baskets because I know that a lot of folk’s really don’t get as much use out of them as they can. Saying that I love my slow n sear. I would buy it again if I had to.

One thing that you didn't mention in the video with the parallel basket method is that an aluminum drip pan actually aids in the heat distribution. I rest the edge of the drip pan on top of the edges of the baskets so it's elevated off of the bottom rack and so it acts as a heat shield to slow cooking down but still benefit from having heat on both sides of the meat.

Have you done a video comparing wood chunks under the charcoal vs chunks on top.....smoker group I'm in I noticed a discussion on both these methods.....about 50/50 split....I've always put my chunks on top....never had bitter smoke....have had many walks but was curious as to one way vs the other Which method do you prefer

I’m new to offset cooking on a bbq. I purchased a Weber Performer in the spring that came with the charcoal baskets. I had a blast this summer cooking back ribs, prime rib, sirloin, chicken and turkey. The biggest game changer for me was a meat thermometer and offset cooking with the charcoal baskets. Think I’m done for the winter, can’t wait until spring!

I did a lowNslow on a 5lb pork loin using just one basket off to the side w/ drip pan under the meat. Started with half a chimney of fully lit charcoal....locked in the temps at 275 tapering to 250 after 2 hours. I had to add about 8 more brickets to finish the cook at 5 hours to 145degrees internal temp. Both vents 1/4 open.

Hello Bill. I do not have a Rotisserie. I have seen only one basket used on one side of the grill. But, I really could not tell you since I have no expierence using a rotisserie.

Came back to watch this again. Smoked a pork butt for carnitas tomorrow. Wanted to say that this is a severely underrated video. I especially like you pointing out the vent vs thermometer canard oft repeated. It's one thing to say 'I don't like it.' It's quite another to assert that it's objectively "wrong." Thanks again. So I just bought a Vortx and realized I don’t need one. I can just use the two baskets to make a vortex. Is there any reason why I should keep this vortex?

Hello Kathy, The Vortex actually works a little better than this setup... now do you need it?... well like everything, that would be a personal choice. I have one but I actually don't use it much, but I know people who swear by it. I wouls say use it... it will delay wear and tear on the baskets.
Now with the big charcoal heat zone. Does that burn the charcoal evenly or do you have to mess with the charcoal to get it to burn evenly?

@@Viewtoagrill one more thing... how would you ignite the coals using the vortex style setup. Would you ignite them all using a Chimney Starter or would you light a few in each basket?
Can you lowNslow with the parallel setup using the hot corner method can you keep temps at 250?

I usually cook my wood to well done. I find it a bit tough rare or medium.

Why do you only light a handful of briquettes and place in the corner with the various configurations? Why not just use a chimney to get them all lit at once?

You only use a few lit briquettes when you want a lower temperature cook for a longer duration of time. Like when smoking ribs.

You just blew my mind, man. Been looking all over for answers on how to slow n sear using these baskets. I have no problem with the slow part, but once it comes time to sear, there is never enough heat. I learned that you can actually start with the sear while the coals are hot, and then finish with the slow. Is that true? Are there any disadvantages to doing it this way?

Hello. Yes you can do that, start with the sear and then finish indirectly. Check out my ‘How to use a charcoal grill from start to finish video’. I show how to do that with burgers… steak would be the same concept. To do it the other way…a reverse sear, check out my new video ‘how to reverse sear a hamburger’. Both ways are great. Just pick one you like the most and go with it.

Why does it feel like 1 chimney in the 26 inch isn’t enough? Everytime I use my 26 it feels like the coals put them selves out ?

Hello Kirt. I use my slow n sear in the 26 to keep the coals organized and in the same spot… this helps. If you don’t have the slow and sear use the baskets to creat a barrier as I show in this video. Just make it to where you use about a 3rd of the kettle as your hot zone. That should help with that.

Nice video. Question: If you want to coock meat for 20 persons (small pieces) and you do method 4. Dont you need to light more charcoles at once? Instead of only 9 pieces hot coles in the corner? I dont want to fail if 20 people overcome for party 😂

Hello. I like to use a lot of coals when grilling. I would use more than enogh. When the cook is over shut down the vents and save the leftover charcoal for the next cook.
No matter where you put the baskets, you always have direct and indirect zones

Absolutely.
The webber kettle doesn't come with the baskets. I just got my first one and I was disappointed when I found that out.

While did you get? I think last year they only include the baskets with a master touch or better. The premium no longer comes with it.
My lid isn’t like this though. The thermometer, handle and vent is in an L shape.

Sounds like you have one of the older weber kettles.
Hm, I had to buy the baskets separately. They weren't included.
