    Thank you so much for explaining what this contraption is and how to use it. Lord help me! Because when my man brought it home I thought ; is it a radar gun? A vibrator? A Lazer microderm machine? When Google said it was a cooker if I hadn't watched your video I would thought it was like a cook ray gun and woulda had it angled with the flat end pointed at the food 😂and would have been very upset to say the least so THANK YOU! THANK YOU! Who knows maybe I should post a comical video of me trying to figure it all out. It just might get a ton of views.

    This video is exactly what I was looking for! It's a right to the point guide. I'm looking forward to receive the anova precision cooker that I just ordered. Thank you very much! I have one question, I saw that you are using an external suction vacuum sealer, how many days can I conserve (for example) cooked chicken in the fridge sealed with it? I don't own a vacuum sealer yet and I'm not sure between buying an external suction and a vacuum chamber. The last one is a lot expensive compared to the first, but I saw that can reach a final vacuum of 2mbar compared to the 300mbar of the external suction.

    Cooked food, UNOPENED, can last quite a bit. It’s pasteurized and in a sealed bag. I don’t have an exact time since there are more factors involved, but I would say it’s probably good up to a week. I’ve kept it there longer but hehe eat your food. I think the vacuum sealer of choice is dependent on your needs. If you’re just going to use it here and there, It’s probably not worth it to get the chamber. The chamber also takes up much more space. If you do plan on using it often, it might be worth it if you have the space. We use an anova sealer, it’s good enough for what we need. To start you can just use freezer zip lock bags. The downside of those is the temperature they can handle.

    Great video as always! I have my anova pro for over a month already and i notice the start of some mineral buildup. Im planning to put it in a water-vinegar bath soon. How often to you descale your sous vide? Another thing regarding experimenting, i found this recipe by leah cohen on pork belly adobo, im filipino and would like to try her version of adobo. I made your chinese pork belly recipe last week and it turned out great. For the adobo recipe she first braised it for 2 hours in a braising liquid of soy sauce, vinegar, sugar, water, star anise, bay leaf. How can i scale it down the propostions of these ingredients? Is it ok to put 1 star anise? Cut it up or use just half? The proportions in her recipe were: 1/4 cup salt, 2tbspn sugar, 1tspn ground pepper, 1 pod anise, 1/3cup soy sauce, 3bayleaves, 2tbspn Apple cider vinegar and 1/2 gallon water. Can i suggest a video idea, show how a normal recipe like the one that calls for braising be made through cooking sous vide. Basic conversions to make it work for sous vide. I hope you can help convert the braising liquid proportion for sous vide, would like to try the adobo recipe this week, hehe. Stay safe guys! Thanks

    For the recipe you're referring to, you can definitely reduce the star anise, and bay leaf. I suggest putting everything in a bag if there there's a lot of spices, but doesn't seem like there is. I would reduce the amount of salt, and probably exclude the water. I've never really tried it so it's hard to say, but that's the general direction I would take. You can add water later on but you probably won't have to.

    very interested but not sure. I am considering this sous vide but not sure if I would use it enough. I am pescaterian, I eat mostly vegetarian diet. My husband does eat other meats but I don't cook red meats very often. The only time he gets steak is eating out. We went to a restaurant recently that uses sous vide, he loved the steak and I thought I would get it, but is it mostly for meats? Would it be useful if meats are not often cooked?

  • @KindofCooking

    There are definitely pros and cons to using the sous vide. One major pro, it's relatively hands off. You could prepare a bunch of vegetables, bag them and toss them in the sous vide on the days you're ready. The other pro is that you get more concentrated flavors for the vegetables. The downside, it requires more time. You need to heat the water (most vegetables are around 180-190F) and then you need to cook it for about 45mins. In that time, you might have been able to make a bunch of dishes already. I find that it comes in handy when i'm cooking for a large party and the stove etc is being used. i'm also able to prepare ahead of time which helps a lot. @KindofCooking

    3 жыл бұрын

    Hey There! your sous vide is noisy? It definitely does make noise, but if it's pretty loud, you should check that the fan/blade are seated correctly. Sometimes it may touch the sides and make noise. Make sure the steel part is on correctly. Also make sure the sous vide is not touching the side of the container, the vibration may create noise. Tighten the screw that holds it in place (not too tight though).

    It's hard to diagnose without seeing or more information. However, are you placing the bags up to the small black tabs? The bags should sit before these tabs and not over it. The bag should be between the small space between the gaskets. You also need to ensure that both sides of the sealers have clipped closed. Here is a video that we made demonstrating how to use it: kzread.info/dash/bejne/mXudwbeCg7mZcqw.html Let me know if that helps solve your problem or if you have more information on what you notice when doing it.

    20 hours to cook my food? How do I know the time and what temp?

  • @KindofCooking

    @KindofCooking

    3 жыл бұрын

    Great question. hehe you can find some times and temps on some of the recipes on our youtube page. Additionally, you can check out pasteurization and cooking times and temperatures through the Douglas Baldwin Guide: www.douglasbaldwin.com/sous-vide.html In general terms, the thicker the cut of meat you have, the longer it takes to pasteurize. Time also helps to tenderize the meat, for example, a cut of brisket will take much longer to tenderize then a rib eye steak at the same temperatures. The temperature dictates the doneness you want. For example, if you like your steam at medium-rare, you can cook it at 130F for 1hour (depends on thickness as stated above), or you can cook it for much longer lets say for 24 hours. But steaks will still be at a medium-rare The longer you cook, the more tender it gets, but there is a certain breaking point where it just becomes mush ;).

  • @KindofCooking

    Most definitely! You can cook as many as you can fit. You'll want to leave some space between each steak or lay them flat in one bag, so that water can circulate properly. If you are stacking them together, the cooking time changes since pasteurization goes by thickness and time. Hope that helps.

I dont see any real need for such. I mean I just rather cook it on the stove in water and spend the money on something else myself. or use my 5-shelf fyer or other cookers. This is just silly to me. How are you saving power by filling with hot water? You're using some sort of energy to heat the water regardless, the only thing you're saving is a bit of time.

    You can get the same by using a do-it-yourself build, buying individual items that can suite you better, like a tank that fits your kitchen the way you like it to be. This is very expensive to get the same results.

    Well, yes. The bags are food safe. Using technology adapted from NASA, this method has been around for decades (since about the 70s). Many restaurants employ this method to cook food. It allowed chef to precisely cook the food and have it available whenever needed. It was more recently introduced to the home cook so they could also prepare restaurant quality food at home. Anyhow, thanks for watching and leaving a comment.

  • @KindofCooking

    @KindofCooking

    I would say that there are different usages. The anova or other vacuum rolls/bags are thicker and can withstand higher temperatures for a longer period of time. The seams are less likely to break when sealed properly ( I always seal twice). You should keep the ziplock portion above water. With the rolls You can also create bags of different sizes, and are cheaper in the long run. I use both. Ziplock when it’s something quick and low temp line a steak - they are readily available. Otherwise, it’s the vacuum bags. Keep in mind, you don’t always have to use the vacuum function. A lot of times I use the water displacement method especially when there is liquid.

    This machine has everything except a power button. I'm serious, there is no way to turn this machine on or off, you either plug it in and leave it in, or unplug it. An expensive electronic with no power button/switch. This also means in order to start the machine remotely, you have to leave the machine plugged in so it's on. Yes you read that right, the app cannot turn the machine on or off. Remote cooking that requires the machine to be left plugged in just so you can start it up. This is an extremely bad design.

    Only used about 6 times so far but food turning out great. kzread.infoUgkxK2YRU9uBOXzuIEV660Qo3sX7dJDJLg72 Nice tender roasts. You do want to get a lid to go over your stock pot to keep water from evaporating. I've used it for 6-48 hours with lots of luck. A lot is trial and error to figure out since thickness and cut help determine the best time. 135 always gives a perfect med (pink all the way through). I cooked frozen solid 3 1/2" roast for 48 hours ... it was so tender its almost falling apart. Nice to put it in and just forget about it, with silicone lid I didn't have to add water at all during 48 hours.
